Tips for success

For the crispiest result, brush the dough generously with the butter-oil mixture before rolling. This not only adds flavor but also creates distinct layers that separate during baking.

Don't skimp on the egg wash—it gives the crust a beautiful shine and helps it brown evenly.

If the dough tears while stretching, don't worry. Press it back together and continue. The layers will hide small imperfections.

For even browning, rotate the baking sheet halfway through. Serve the börek warm, as it loses some crispness as it cools, though it's still delicious at room temperature.

Variations

  • Cheese and Herb: Replace the beef filling with a mixture of crumbled feta, chopped parsley, and a pinch of black pepper. Omit the onion and cook the filling briefly to remove excess moisture.
  • Spicy Lamb: Use ground lamb instead of beef and add a teaspoon of red pepper flakes or aleppo pepper to the filling. Cook the onion until deeply caramelized for extra sweetness.
  • Vegetarian Mushroom: Sauté sliced mushrooms with onion until browned and dry, then season with black pepper. Use this as the filling, ensuring it is completely cool before assembling.
  • Breakfast Börek: Fill the dough with a mixture of scrambled eggs (cooked through), crumbled sausage, and shredded cheese. Bake as directed, and serve for breakfast or brunch.

Storage and make-ahead

Fridge
Store leftover börek in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven to crisp the crust.
Freezer
Freeze the unbaked spiral on a baking sheet, then wrap tightly and freeze for up to 2 months. Bake from frozen, adding 10-15 minutes to the baking time.
Reheat
Reheat baked börek in a 350°F (175°C) oven for 5-10 minutes until hot and crisp. Do not microwave.

Store leftover börek in an airtight container at room temperature for up to 2 days. To reheat, place it in a 350°F (175°C) oven for 5-10 minutes to restore crispness. Avoid microwaving, as it makes the crust soft.

The dough can be made a day ahead and kept in the refrigerator, covered. Let it come to room temperature before stretching. The filling can also be cooked in advance and refrigerated; bring it to room temperature before assembling.

Serving ideas

Serve the börek warm, cut into wedges, as a main dish or a hearty snack.

It pairs beautifully with fresh Turkish tea, as shown in the video, or with a simple side salad. The crispy layers and savory filling make it satisfying on its own.

For a more substantial meal, serve it alongside yogurt or a tomato-cucumber salad.

The börek is also great for picnics or gatherings—just cut it into smaller pieces for easy sharing. It's best enjoyed the same day, but leftovers can be refreshed in the oven.

Frequently asked questions

Can this börek be made ahead of time?
Yes, the dough and filling can be prepared a day ahead and refrigerated separately. Bring them to room temperature before stretching and assembling. The assembled börek can also be frozen unbaked; bake from frozen, adding extra time.
Why does the dough tear when stretching?
Tearing usually happens if the dough hasn't rested long enough or if it's too dry. Make sure to coat the dough balls in the butter-oil mixture and let them rest for at least 30 minutes. If the dough still tears, let it rest a few more minutes and stretch gently from the center.
Can this recipe be made without yeast?
Yes, you can omit the yeast and use a little baking powder instead, but the texture will be slightly different. The yeast helps relax the gluten, making the dough easier to stretch. Without it, the dough may be a bit tougher.
Is it necessary to use the butter-oil mixture?
Yes, the mixture is essential for achieving the ultra-crispy, flaky layers. Butter adds flavor, while oil prevents burning at the high oven temperature. Using only butter may cause it to brown too quickly, and using only oil will lack flavor.
How do you know when the börek is fully baked?
The börek is done when the top is deep golden brown and blistered, and the crust feels firm and crisp. The internal temperature of the meat filling should reach 160°F (71°C). Let it cool for at least 10 minutes before cutting to allow the layers to set.

Ultra-Crispy Turkish Meat Börek

Golden spiral Turkish meat börek with flaky layers on a baking sheet

Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups water
  • 1 tsp dry yeast
  • 1 tbsp salt
  • 1/2 cup melted butter mixed with vegetable oil
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 1 tsp black pepper
  • 1 large egg, beaten

Instructions

  1. In a large bowl, combine the flour, water, yeast, and salt. Knead until a soft, smooth dough forms, about 8 to 10 minutes. Divide the dough into 8 equal balls. Pour the melted butter and oil mixture into a dish and dip each dough ball into it, coating thoroughly. Cover and let rest for 30 minutes.
  2. While the dough rests, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned. Add the chopped onion and black pepper, and cook until the onion is soft and translucent. Remove from heat and let cool completely.
  3. On a lightly oiled surface, take one dough ball and gently stretch it with your fingertips, working from the center outward, until it is thin enough to see through without tearing. Aim for a large, translucent sheet.
  4. Spoon a portion of the cooled beef filling along the bottom edge of the stretched dough, leaving a small border. Roll the dough over the filling to enclose it, then continue rolling into a thin rope. Repeat with the remaining dough balls and filling.
  5. On a baking sheet, take one filled rope and coil it into a tight spiral, starting from the center and winding outward. Continue adding ropes, attaching the end of one to the start of the next, until all the dough and filling are used and you have one large spiral.
  6. Preheat the oven to 390°F (200°C). Brush the top of the spiral with the remaining butter-oil mixture, then brush with the beaten egg. Bake for 30 minutes, until the crust is deep golden, blistered, and shatters when tapped.
  7. Remove the börek from the oven and let it cool on the baking sheet for at least 10 minutes. Serve warm, cut into wedges, with fresh Turkish tea on the side.
