Tips for success

For an even more intense chocolate experience, you can place a small square of solid dark chocolate in the very center of the batter after pouring it into the ramekins.

This ensures a guaranteed molten core, even if the baking time is slightly off. Just make sure the chocolate piece is fully submerged in the batter.

The choice of temperature for your sorbet is crucial. Serve the sorbet immediately upon plating so that it provides a cold, refreshing contrast to the warm, gooey chocolate.

You can also experiment with other garnishes like fresh raspberries or a light dusting of sea salt, which enhances the depth of the dark chocolate flavor.

Variations

  • White Chocolate Lava: Substitute the dark chocolate with high-quality white chocolate. Note that white chocolate is sweeter, so you may want to reduce the added sugar by half to maintain a balanced flavor profile.
  • Coffee Infused: Add one teaspoon of instant espresso powder to the melted chocolate and butter mixture. The coffee enhances the deep, complex notes of the dark chocolate, providing a sophisticated twist.

Storage and make-ahead

Fridge
Store leftover cakes in an airtight container in the refrigerator for up to two days.
Reheat
Reheat in a microwave for 20-30 seconds until the center is warm and flows again, though the texture may change slightly compared to fresh baking.

If you have leftovers, they can be stored in the refrigerator, but they will lose their molten center once chilled. To serve again, they must be reheated gently.

It is best to consume these cakes immediately after baking to enjoy the intended texture and temperature contrast between the warm cake and the liquid center.

You can prepare the batter and fill the ramekins in advance. Keep the filled, unbaked ramekins in the refrigerator for up to one hour before baking. If you are baking them straight from the refrigerator, you may need to add one extra minute to the baking time to ensure the edges set properly.

Serving ideas

Serve each cake immediately on a small dessert plate. The warmth of the cake is integral to the experience, so do not let them sit for more than a minute or two before serving.

Placing the raspberry sorbet slightly to the side creates a beautiful visual contrast and adds a bright acidity that cuts through the richness.

Consider using a wide, flat spoon for serving to ensure your guests can easily scoop both the cake and the molten center together. The presentation should be simple and elegant, allowing the chocolate to be the star. Adding a few fresh raspberries around the plate can also enhance the overall look of the dish.

Frequently asked questions

Can the batter be made ahead of time?
Yes, the batter can be prepared and poured into the ramekins up to one hour before baking. Keep them refrigerated until you are ready to put them in the oven, and add one minute to the total baking time if they are very cold.
Why does the lava cake lack a molten center?
The most common reason is overbaking. Even one or two extra minutes in the oven can cause the center to set completely. Ensure your oven is accurately preheated and use a timer to pull the cakes out exactly at the twelve-minute mark.
Can milk chocolate be used instead of dark chocolate?
Milk chocolate contains more sugar and less cocoa butter than dark chocolate, which can make the cakes overly sweet and less structurally sound. If you prefer a milder flavor, try a blend of semi-sweet and milk chocolate for better results.

Twelve-Minute Molten Dark Chocolate Lava Cake

Ingredients

  • 150 g 70% dark chocolate
  • 120 g salted butter
  • 3 whole eggs
  • 3 egg yolks
  • 80 g sugar
  • 40 g sifted all-purpose flour
  • powdered sugar, for serving
  • raspberry sorbet, for serving

Instructions

  1. Melt the dark chocolate and salted butter together in a heat-proof bowl over a simmering pot of water or in the microwave in short bursts. Stir until the mixture is completely smooth and glossy. Ensure the chocolate does not overheat, as this can affect the texture of the final cake.
  2. In a separate large bowl, whisk together the whole eggs, egg yolks, and sugar until the mixture is pale and slightly thickened. Gradually incorporate the melted chocolate and butter mixture into the egg mixture, whisking constantly to combine. Sift the flour into the bowl and fold it in gently until just combined.
  3. Grease four ramekins thoroughly with butter and dust with cocoa powder to prevent sticking. Divide the chocolate batter evenly among the prepared ramekins. Place in an oven preheated to 425°F (218°C) and bake for exactly twelve minutes. The edges must be firm, but the center should remain soft and liquid.
  4. Remove the ramekins from the oven and let them rest for two minutes. Carefully invert each ramekin onto a serving plate. Dust the tops with powdered sugar and serve immediately with a scoop of raspberry sorbet on the side. The internal center should release a warm stream of molten chocolate when spooned.
Contains: gluten, eggs, milk
Food safety: This cake contains undercooked eggs in the center to maintain the molten texture. Use pasteurized eggs if concerned about food safety.
