Tips for success
For the best results, use full-fat dairy. Whole milk and heavy cream give the soak richness that low-fat versions can't match.
The sweetened condensed milk adds sweetness and body, so don't skip it. If you prefer a less sweet dessert, you can reduce the condensed milk slightly, but the texture will be less creamy.
When making the caramel, watch it closely—it can go from golden to burnt in seconds. If you have a candy thermometer, aim for 350°F (177°C) for a deep amber color.
If the caramel hardens too much after cooling, gently reheat it with a splash of cream to loosen it. Always let the caramel cool for a few minutes before pouring to avoid melting the whipped cream.
Variations
- Chocolate Trileçe: Add 2 tablespoons of cocoa powder to the flour when making the sponge. For the caramel, melt 1/2 cup of dark chocolate with the cream after adding it to the sugar. This gives a rich, mocha-like flavor.
- Coffee Caramel: Add 1 teaspoon of instant espresso powder to the caramel along with the heavy cream. The coffee enhances the caramel's depth and pairs beautifully with the milky sponge.
- Citrus Twist: Add the zest of one orange to the sponge batter and use orange juice in place of half the milk in the soak. The bright citrus cuts through the richness and adds a refreshing note.
- Nutty Crunch: Sprinkle chopped pistachios or hazelnuts over the caramel before it sets. The nuts add a crunchy contrast to the soft cake and a subtle earthy flavor.
Storage and make-ahead
- Fridge
- Store in the refrigerator for up to 3 days, covered. The caramel may soften, but the cake stays moist.
- Freezer
- Freeze the unfrosted, soaked cake for up to 2 months. Thaw overnight in the refrigerator, then add whipped cream and caramel.
- Reheat
- Do not reheat. Serve cold or at room temperature.
Store leftover trileçe in the refrigerator, covered, for up to 3 days. The cake will continue to absorb the milk and caramel, becoming even more moist. Before serving, let it sit at room temperature for 10 minutes to take the chill off. The caramel may soften slightly, but the flavor remains delicious.
Trileçe is an excellent make-ahead dessert. Prepare the cake, soak it, and refrigerate overnight. The next day, add the whipped cream and caramel just before serving.
The cake can be fully assembled up to 24 hours in advance, but the caramel may lose its crackly top if left too long. For best texture, add the caramel no more than a few hours before serving.
Serving ideas
Serve trileçe cold, straight from the refrigerator. Use a sharp knife dipped in hot water and wiped dry to get clean slices. The cake is rich, so a small square is satisfying. Garnish with a sprinkle of sea salt or a few toasted nuts if desired, though the classic version is plain.
This dessert pairs beautifully with strong coffee or Turkish tea. The sweetness of the caramel and milk is balanced by the bitterness of the coffee.
For a special occasion, serve it with a dollop of extra whipped cream or a scoop of vanilla ice cream on the side. Trileçe is a crowd-pleaser that's sure to disappear quickly.

Turkish Trileçe: Three-Milk Caramel Cake

Ingredients
- 4 large eggs, separated
- 100 g sugar
- 150 g all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup sweetened condensed milk
- 1 cup whipped cream
- 1 cup sugar
- 2 tbsp unsalted butter
- 1/2 cup heavy cream
Instructions
- Heat the oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper. Separate the eggs, placing the whites in a large bowl and the yolks in another. Beat the egg whites with an electric mixer on medium-high speed until stiff peaks form. Gradually add the sugar to the yolks and beat until pale and thick. Gently fold the yolk mixture into the whites. Sift the flour and baking powder over the egg mixture, add the vanilla, and fold gently until just combined.
- Bake for 25 minutes, until the top is golden and a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. While the cake is still warm, use a skewer to poke holes all over the surface, going all the way to the bottom.
- In a large measuring cup, whisk together the whole milk, heavy cream, and sweetened condensed milk until well combined. Slowly pour the milk mixture over the warm cake, letting it absorb before adding more. Continue until all the milk is used. The cake will look very wet, but that's correct. Cover and refrigerate for at least 2 hours, or overnight, until fully chilled.
- Spread the whipped cream evenly over the chilled cake, creating a smooth layer. Return the cake to the refrigerator while you make the caramel.
- In a small saucepan, heat the sugar over medium heat, stirring occasionally, until it melts and turns a deep amber color. Remove from heat and carefully whisk in the butter until melted, then slowly add the heavy cream. The mixture will bubble vigorously. Stir until smooth, then let cool for a few minutes until slightly thickened but still pourable.
- Pour the warm caramel over the whipped cream layer, tilting the pan to cover evenly. Use a toothpick to create decorative feather patterns in the caramel. Chill for at least 30 minutes to set the caramel slightly. Slice and serve cold.
