Tips for success
For the best texture, serve the süt helvası warm, straight from the broiler. The contrast between the crisp, caramelized top and the silky interior is the hallmark of this dessert.
If the pudding sits too long, the top may soften, so plan to broil it just before serving. You can also prepare the pudding base ahead and broil it right before serving.
When broiling, watch closely—the sugar in the custard can go from golden to burnt in a matter of seconds. If your broiler runs hot, move the rack down a notch.
For a more even caramelization, use a wide, shallow baking dish rather than a deep one. The hazelnuts should be added just before serving to keep their crunch.
Variations
- Orange Blossom: Add 1 teaspoon of orange blossom water to the milk mixture along with the vanilla. The floral note pairs beautifully with the caramelized top. For extra zest, include a strip of orange peel while warming the milk, then remove it before pouring.
- Chocolate Swirl: Melt 50 g of dark chocolate and swirl it into the pudding just before pouring into the baking dish. The chocolate will create a marbled effect and add a rich, bittersweet contrast to the sweet custard. Keep the rest of the recipe unchanged.
- Coffee Infused: Add 1 tablespoon of instant espresso powder to the milk mixture and whisk until dissolved. The coffee deepens the caramelized flavor and adds a subtle bitterness that balances the sweetness. Finish with a dusting of cocoa powder instead of hazelnuts.
- Cardamom Scented: Crush 3 green cardamom pods and add them to the milk while warming. Strain the milk before mixing with the roux. The cardamom adds a warm, aromatic spice that complements the vanilla and caramel. Garnish with crushed pistachios instead of hazelnuts.
Storage and make-ahead
- Fridge
- Leftover süt helvası can be refrigerated for up to 2 days. Reheat gently in a 350°F (175°C) oven for 5-7 minutes.
- Freezer
- Freezing is not recommended, as the texture of the pudding will become watery and the caramelized top will lose its crispness.
- Reheat
- To reheat, place the pudding in a preheated 350°F (175°C) oven for 5 to 7 minutes, or until warmed through. The top may soften, but the flavor will be intact.
Store any leftovers in the refrigerator for up to 2 days. The pudding will firm up when chilled, but the caramelized top may soften slightly. To reheat, place it in a 350°F (175°C) oven for 5 to 7 minutes, or until warmed through. The top won't be as crisp as when fresh, but the flavor remains delicious.
You can prepare the pudding base up to 1 day ahead, but do not broil it until ready to serve. After making the custard, let it cool completely, cover, and refrigerate.
When ready to serve, pour the cold pudding into a baking dish and broil as directed, adding a few extra minutes to compensate for the cold start.
Serving ideas
Serve the süt helvası warm, directly from the baking dish or individual bowls. The contrast between the crackly, caramelized top and the silky, molten interior is the star of the show. A spoonful of the pudding should flow like liquid silk, with the hazelnuts providing a satisfying crunch.
This dessert pairs wonderfully with a scoop of vanilla ice cream or a dollop of clotted cream, but it's equally delicious on its own.
For a special presentation, dust the top with a little ground cinnamon or drizzle with honey before serving. The rich, caramelized flavors are best enjoyed with strong Turkish coffee or a glass of cold milk.

Turkish Süt Helvası: Caramelized Baked Milk Pudding

Ingredients
- 100 g unsalted butter
- 100 g all-purpose flour
- 1 liter whole milk
- 200 g sugar
- 1 egg yolk
- 1 tsp pure vanilla extract
- 50 g crushed roasted hazelnuts
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously. Cook for about 3 minutes, until the flour is fragrant and nutty, but do not let it change color.
- In a separate bowl, whisk together the milk, sugar, egg yolk, and vanilla extract. Warm this mixture gently in a saucepan over low heat, whisking occasionally, until it is warm to the touch but not boiling.
- Slowly pour the warm milk mixture into the butter-flour roux, whisking constantly. Continue to whisk over medium heat until the mixture thickens into a smooth, velvety pudding. Cook for 2 to 3 minutes, until it coats the back of a spoon.
- Pour the warm pudding into a baking dish or individual clay bowls. Place under a preheated broiler at 230°C (450°F) and cook for 12 minutes, until the top is deeply caramelized and blistered.
- Remove the pudding from the broiler and let it cool for a few minutes. Scatter the crushed roasted hazelnuts over the top and serve warm.
