Tips for success
For the best texture, use a yogurt with at least 10% fat. The fat helps the yogurt whip into a stable, airy foam.
If your yogurt is too thick, you can thin it with a little milk, but be aware that this will make it less likely to hold its shape. Always whisk the yogurt just before serving – if it sits too long, it will deflate and become watery.
The chili butter can be made ahead and reheated just before serving. Store the butter in a small saucepan and reheat over low heat until sizzling, then pour over the yogurt.
The chilies will soften and release more flavor over time, so this can actually enhance the dish. Just be sure to reheat it until it's hot enough to sizzle.
Variations
- Spicy Tomato Butter: Add a teaspoon of tomato paste to the butter while it melts, and stir until it sizzles and darkens. This adds a rich, umami depth that pairs beautifully with the yogurt. Use a mild dried chili if you prefer less heat.
- Herbed Yogurt: Fold in a tablespoon of chopped fresh herbs, such as dill, mint, or parsley, into the whipped yogurt. This adds a fresh, bright note that complements the spicy butter. Serve with pita chips for a crunchier texture.
- Smoky Eggplant Version: Blend 1/2 cup of roasted, mashed eggplant into the yogurt before whipping. This gives the meze a smoky, creamy depth. You can also add a pinch of smoked paprika to the chili butter for extra smokiness.
- Mild and Nutty: Replace the Arnavut chilies with 1 teaspoon of Aleppo pepper flakes, which are milder and fruitier. Add a tablespoon of chopped walnuts to the butter for a nutty crunch. This version is perfect for those who prefer a gentler heat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. The yogurt may separate slightly; stir before serving.
- Freezer
- Freezing is not recommended, as the yogurt will become watery and the texture will be ruined.
- Reheat
- Reheat the chili butter gently in a small saucepan over low heat until sizzling, then pour over the yogurt. Do not microwave, as it may splatter and overheat.
Store any leftover meze in an airtight container in the refrigerator for up to 2 days. The yogurt will thicken and the chili butter will solidify, so bring it to room temperature before serving.
The texture will not be as fluffy as when freshly made, but the flavor will still be delicious. The bread is best eaten fresh, but can be stored in a bread box for a day.
The whipped yogurt can be made up to 4 hours ahead and kept chilled. The chili butter can be made ahead and stored in the refrigerator for up to 1 week. Reheat the butter just before serving. The assembled meze is best served immediately, so wait to pour the hot butter until just before bringing it to the table.
Serving ideas
Serve the meze as an appetizer with warm crusty bread, or as a side to grilled meats, especially lamb or chicken. It also works well as a dip for raw vegetables, though bread is the traditional accompaniment.
For a more substantial spread, serve it alongside other meze like hummus, baba ghanoush, and stuffed grape leaves.
For a dramatic presentation, bring the sizzling pan to the table and pour the butter over the yogurt in front of guests. The sound and aroma are part of the experience. If you have leftovers, they can be used as a sauce for roasted vegetables or as a spread for sandwiches.

Turkish Atom Meze: Whipped Garlic Yogurt with Sizzling Chili Butter

Ingredients
- 2 cups thick strained Turkish yogurt (süzme yoğurt)
- 3 cloves garlic, minced
- 1/2 tsp salt
- 3 tbsp butter
- 1 tbsp olive oil
- 8-10 dried hot red Turkish Arnavut chilies (Arnavut biberi)
- Warm crusty bread, for dipping, to taste
Instructions
- In a medium bowl, combine the thick strained Turkish yogurt, minced garlic, and salt. Whisk vigorously for 2-3 minutes until the yogurt becomes silky, dense, and fluffy, almost like a thick cloud. Scrape down the sides of the bowl as needed.
- Using a rubber spatula, transfer the whipped yogurt to a serving plate. Spread it in gentle waves, creating peaks and valleys with the spatula. The surface doesn't need to be perfectly smooth – the texture will catch the chili butter.
- In a small skillet or copper pan, combine the butter and olive oil. Place over medium heat and let the butter melt completely. Swirl the pan gently to combine the fats.
- Add the dried Arnavut chilies to the hot butter and oil. Let them sizzle for about 1 minute, turning occasionally, until they blister and the butter turns a fiery red. The chilies should be fragrant and slightly puffed.
- Immediately pour the hot chili butter and chilies evenly over the whipped yogurt. The sizzle will be dramatic – the cold yogurt meeting the hot butter. Do not stir; let the butter pool and drip down the yogurt waves.
- Serve the meze immediately with warm crusty bread for dipping. To eat, scoop a piece of bread through the yogurt, catching both the cool creamy yogurt and the hot chili butter in each bite.
