Tips for success
For the smoothest glaze, make sure the cake is very cold before pouring. The glaze should be at 90°F (32°C) for the perfect consistency. If it is too thick, reheat it gently; if too thin, let it cool slightly.
Use a pouring cup with a spout for control. After glazing, let the cake sit for a few minutes so the glaze sets, then transfer it with a spatula to avoid fingerprints.
To get clean slices, use a large chef’s knife dipped in hot water and wiped dry before each cut. This melts through the glaze and mousse without dragging.
For the white chocolate curls, use a vegetable peeler on a thick block of chocolate for larger curls, or a box grater for finer ones. Store the cake in the refrigerator until serving, but let it sit at room temperature for 10 minutes to take the chill off.
Variations
- Chocolate Mousse Layer: Swap the mango mousse for a dark chocolate mousse for a richer dessert. Reduce the sugar in the mousse to balance the bitterness of dark chocolate. Keep the passion fruit curd for contrast.
- Coconut Mango: Add 1/2 cup of coconut cream to the mousse for a tropical twist. Garnish with toasted coconut flakes along with the mango and passion fruit seeds.
- Berry Mirror Glaze: Instead of passion fruit glaze, use a raspberry or strawberry mirror glaze for a different color and flavor. The tartness of berries complements the mango mousse.
- Mini Cakes: Use small ring molds to make individual servings. Adjust the chilling and glazing times accordingly. Perfect for parties.
Storage and make-ahead
- Fridge
- Store in the refrigerator for up to 3 days, covered. The glaze may dull slightly but the cake remains delicious.
- Freezer
- Freeze the unglazed cake for up to 1 month. Thaw in the refrigerator overnight, then glaze and serve.
- Reheat
- This cake is best served cold; do not reheat. If frozen, thaw in the refrigerator before glazing.
Store the cake in the refrigerator, loosely covered, for up to 3 days. The glaze may lose some shine over time, but the flavor remains. Keep it away from strong-smelling foods, as the cake absorbs odors. For best texture, consume within 2 days.
The cake can be made a day ahead. Assemble and chill the mousse cake, then prepare the glaze and decorate the next day. The curd can be made up to 3 days in advance and kept refrigerated. The mousse can also be prepared a day ahead and kept in the refrigerator.
Serving ideas
Serve the cake chilled, straight from the refrigerator, for the best texture. The mousse should be firm but creamy, and the glaze should be glossy.
Use a cake server to lift each slice carefully, as the layers are delicate. A drizzle of extra passion fruit pulp or a few fresh berries on the plate adds a nice touch.
This cake pairs beautifully with a cup of hot tea or coffee. The tangy passion fruit curd cuts through the sweetness, making it a balanced dessert.
For a special occasion, add a dollop of whipped cream or a scoop of coconut sorbet on the side. The vibrant colors make it a festive centerpiece.

Tropical Mirror Glaze Mousse Cake with Mango and Passion Fruit

Ingredients
- 2 cups ripe golden mango, diced
- 1/2 cup passion fruit seeds (from about 6 passion fruits)
- 8 oz white chocolate, grated into curls
- 1 cup mango puree
- 1 1/2 cups heavy cream, cold
- 2 tsp powdered gelatin
- 3 tbsp water
- 1/2 cup granulated sugar
- 1 cup passion fruit curd (store-bought or homemade)
- 2 cups mirror glaze (see notes)
Instructions
- In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. In a small saucepan, heat the mango puree and sugar over medium heat until the sugar dissolves. Remove from heat and whisk in the bloomed gelatin until fully dissolved. Let the mixture cool to room temperature.
- In a large bowl, whip the cold heavy cream with an electric mixer on medium-high speed until soft peaks form. The cream should hold its shape but still be silky.
- Gently fold the cooled mango-gelatin mixture into the whipped cream using a silicone spatula. Fold until no streaks remain. The mousse should be airy and light.
- Place the cake ring on a flat plate lined with plastic wrap. Pour half of the mango mousse into the ring. Spoon the passion fruit curd into the center, keeping it away from the edges. Top with the remaining mousse and smooth the top.
- Refrigerate the assembled cake for at least 4 hours, or until the mousse is completely set and firm to the touch.
- Prepare the mirror glaze according to your chosen recipe and cool it to 90°F (32°C). Place the chilled cake on a wire rack over a baking sheet. Pour the glaze over the top and sides in one steady motion, covering the entire surface.
- Immediately top the glazed cake with fresh mango cubes, white chocolate curls, and passion fruit seeds. Let the glaze set for a few minutes, then carefully transfer the cake to a serving plate. Slice with a hot knife for clean edges.
