Before you start

Before starting, make sure all your ingredients are measured and ready. The mousse requires chilled heavy cream, and the gelatin needs to bloom. The passion fruit curd should be at room temperature for easy spooning.

Have your cake ring lined and ready. The mirror glaze can be prepared ahead and kept warm, but it must be at the correct temperature when you pour it. Allow enough time for chilling—at least 4 hours, but overnight is better.

Ingredients at a glance (10)
  • 2 cups ripe golden mango, diced
  • 1/2 cup passion fruit seeds (from about 6 passion fruits)
  • 8 oz white chocolate, grated into curls
  • 1 cup mango puree
  • 1 1/2 cups heavy cream, cold
  • 2 tsp powdered gelatin
  • 3 tbsp water
  • 1/2 cup granulated sugar
  • 1 cup passion fruit curd (store-bought or homemade)
  • 2 cups mirror glaze (see notes)

Instructions

Building the Mousse

  1. Prepare the Mousse Base
In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. In a small saucepan, heat the mango puree and sugar over medium heat until the sugar dissolves. Remove from heat and whisk in the bloomed gelatin until fully dissolved. Let the mixture cool to room temperature.
Look for The mango puree mixture should be smooth and slightly thickened.
Tip Do not let the puree boil; just heat until the sugar dissolves.
  2. Whip the Cream
In a large bowl, whip the cold heavy cream with an electric mixer on medium-high speed until soft peaks form. The cream should hold its shape but still be silky.
Look for Soft peaks droop slightly when the whisk is lifted.
Tip Chill the bowl and whisk beforehand for faster whipping.
  3. Fold the Mousse
Gently fold the cooled mango-gelatin mixture into the whipped cream using a silicone spatula. Fold until no streaks remain. The mousse should be airy and light.
Look for The mixture is uniform pale yellow with a fluffy texture.
Tip Fold slowly to keep the air in the cream.

At the end of this phase, you should have a light, fluffy mango mousse that holds its shape when spooned. The cream is whipped to soft peaks, and the mango-gelatin mixture is fully incorporated without any streaks.

The mousse should be airy and pale yellow, with a smooth texture. It should not be runny or dense. If it is too soft, chill it briefly before layering.

Assembling and Chilling

  1. Layer the Cake
Place the cake ring on a flat plate lined with plastic wrap. Pour half of the mango mousse into the ring. Spoon the passion fruit curd into the center, keeping it away from the edges. Top with the remaining mousse and smooth the top.
Look for The curd is hidden in the middle, fully surrounded by mousse.
Tip Use a piping bag for the curd to keep it centered.
  2. Chill the Cake
Refrigerate the assembled cake for at least 4 hours, or until the mousse is completely set and firm to the touch.
Look for The mousse is firm and does not stick to your finger when touched.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Overnight chilling gives the cleanest slices.

The cake is assembled in the ring, with the curd hidden in the center. The top is smoothed, and the cake is chilled until firm. When you press gently on the surface, it should feel set and spring back slightly. The curd should be fully enclosed, with no mousse on top. The cake should be cold to the touch and hold its shape when the ring is removed.

Glazing and Decorating

  1. Glaze the Cake
Prepare the mirror glaze according to your chosen recipe and cool it to 90°F (32°C). Place the chilled cake on a wire rack over a baking sheet. Pour the glaze over the top and sides in one steady motion, covering the entire surface.
Look for The glaze is smooth and glossy, with no bare spots.
Tip Work quickly; the glaze sets fast.
  2. Decorate and Serve
Immediately top the glazed cake with fresh mango cubes, white chocolate curls, and passion fruit seeds. Let the glaze set for a few minutes, then carefully transfer the cake to a serving plate. Slice with a hot knife for clean edges.
Look for The glaze is set and the toppings are evenly distributed.
Tip Dip the knife in hot water and wipe it dry before each cut.

The glaze is poured evenly, covering the top and sides in a smooth, shiny layer. It sets quickly, so work fast. The toppings—mango cubes, chocolate curls, and passion fruit seeds—are added immediately. The finished cake has a mirror-like surface with vibrant orange color, and the toppings add texture and contrast. The glaze should be firm to the touch, not sticky.

Common mistakes

One common mistake is over-whipping the cream, which can make the mousse grainy. Stop as soon as soft peaks form. Another is folding the gelatin mixture into the cream while it is still warm, which can deflate the mousse—cool it to room temperature first.

When pouring the glaze, ensure the cake is well-chilled; otherwise, the glaze will melt the mousse. Also, do not overheat the glaze, or it will lose its shine.

How to tell it’s done

The cake is done when the mousse is fully set and holds its shape when the ring is removed. The glaze should be smooth and glossy, with no drips or bare spots. When sliced, the layers should be distinct: the mousse light and airy, the curd creamy and tangy.

The internal temperature of the mousse should be below 40°F (4°C) for clean slicing, but this is not a safety concern since the eggs are cooked in the curd if using a cooked recipe.

  • Egg dishes: 160°F (71°C) in the thickest part
