Tips for success
For the best flavor, let the bark sit at room temperature for 5-10 minutes after removing from the fridge. This allows the chocolate to soften slightly, making it easier to slice and enhancing the taste.
If you prefer a firmer texture, serve it straight from the refrigerator. The caramel swirls will become more pronounced as the bark warms, creating a beautiful marbled effect.
When slicing, use a large, sharp chef's knife and apply even pressure. For perfectly clean cuts, dip the knife in hot water, wipe it dry, and slice immediately. This helps the knife glide through the chocolate without cracking.
If the bark becomes too hard, let it sit at room temperature for a few minutes before slicing. Store any cut bars in an airtight container with parchment paper between layers.
Variations
- Dark Chocolate Version: Substitute the white chocolate with dark or milk chocolate for a richer flavor. The caramel and tropical toppings will still shine, but the overall taste will be more intense and less sweet.
- Coconut Sprinkle: Add a layer of toasted shredded coconut on top of the chocolate along with the nuts and pineapple. The coconut adds extra texture and reinforces the tropical theme.
- Spiced Caramel: Infuse the passion fruit caramel with a pinch of cinnamon or cardamom before swirling. The warm spices complement the fruit and chocolate, adding depth to the flavor.
- Citrus Zest: Add a teaspoon of orange or lime zest to the melted chocolate before spreading. The citrus brightness enhances the tropical fruit and balances the sweetness.

This bark can be made up to 2 weeks in advance. Prepare it as directed, then store it in the refrigerator in an airtight container. Slice into bars just before serving to maintain the clean edges. You can also freeze the entire slab, wrapped tightly in plastic wrap and foil, for up to 3 months. Thaw in the refrigerator overnight before slicing.
Serving ideas
Serve the bark as a dessert on its own or alongside fresh fruit and coffee. The tropical flavors pair beautifully with coconut sorbet or a scoop of vanilla ice cream.
For a festive presentation, arrange the bars on a platter and garnish with edible flowers or extra shredded coconut. The bark also makes a lovely homemade gift—wrap individual bars in parchment and tie with ribbon.
For a more elegant dessert, break the bark into irregular shards and use them to top cheesecake, mousse, or pavlova. The combination of white chocolate, macadamia, and passion fruit is versatile enough to complement many desserts.
You can also crumble the bark over yogurt or oatmeal for a sweet crunch. The possibilities are endless, so have fun experimenting.

Tropical Macadamia Coconut Bark with White Chocolate

Ingredients
- 16 oz white chocolate, finely chopped
- 1 cup roasted macadamia nuts, chopped
- 1/2 cup candied pineapple wedges, chopped
- 1/2 cup passion fruit caramel
Instructions
- Using a sharp chef's knife, chop the roasted macadamia nuts into coarse pieces. Then chop the candied pineapple wedges into small, uniform chunks. Set both aside in separate bowls.
- Grate the solid block of white chocolate using a box grater on the large holes. You should have a pile of ivory-white chocolate curls and shreds.
- Place the grated white chocolate in a heatproof bowl. Set the bowl over a saucepan of barely simmering water, making sure the bottom doesn't touch the water. Stir gently until completely melted and smooth.
- Pour the melted white chocolate into a parchment-lined metal tray. Use a spatula to spread it into an even layer. Spoon the passion fruit caramel over the chocolate and gently swirl it with a knife or skewer to create a marbled pattern.
- Evenly scatter the chopped macadamia nuts and candied pineapple over the top of the chocolate. Press them gently into the surface so they adhere.
- Refrigerate the tray for at least 30 minutes, or until the chocolate is fully set and firm. Once set, lift the slab from the tray using the parchment, then slice it into thick bars with a sharp knife.
- Lift one thick bar and snap it cleanly in half to reveal the layered cross-section. Serve the bars at room temperature or slightly chilled.
