Tips for success
To toast shredded coconut, spread it in a dry skillet over medium heat and stir constantly until golden brown, about 2 to 3 minutes. Watch carefully because it can burn quickly.
Let it cool before using as a topping. For a more intense lime flavor, add a little lime zest to the whipped cream as well as on top.
For the best texture, chill the cake for at least 6 hours, but overnight is even better. This allows the flavors to meld and the cake to become perfectly moist.
If you're short on time, you can reduce the chilling to 4 hours, but the cake may not be as soaked. Use a sharp knife to cut clean slices, and wipe the blade between cuts to keep the presentation neat.
Variations
- Chocolate Coconut Tres Leches: Replace 1/4 cup of the flour with unsweetened cocoa powder in the sponge. Add 1/4 cup chocolate chips to the soak for a chocolate-coconut twist. Top with chocolate shavings instead of lime zest.
- Mango Coconut Tres Leches: Add 1 cup of pureed ripe mango to the coconut milk bath. Top the cake with fresh mango slices and a sprinkle of toasted coconut. This adds a fruity, tropical flavor that complements the coconut.
- Rum-Free Version: Omit the coconut rum and add 1 teaspoon of coconut extract to the soak. This keeps the coconut flavor without the alcohol, making it suitable for all ages.
- Individual Serving: Instead of a 9x13-inch pan, bake the sponge in a muffin tin for 20 minutes. Adjust soaking time to 2 hours. Serve each mini cake in a glass with extra cream and coconut.
Storage and make-ahead
- Fridge
- Store the cake covered in the refrigerator for up to 4 days. The topping may soften, but the cake will remain moist and flavorful.
- Freezer
- Freeze the un-topped soaked cake for up to 2 months. Thaw overnight in the refrigerator before adding the whipped cream topping.
- Reheat
- This cake is best served cold; do not reheat. If frozen, thaw in the refrigerator before topping and serving.
Store leftover coconut tres leches cake in an airtight container in the refrigerator for up to 4 days. The cake will continue to absorb the liquid and become more moist over time. Keep it chilled until ready to serve.
This cake is perfect for making ahead. Prepare the cake up to 2 days in advance, soak it, and keep it refrigerated. Top with whipped cream and garnishes just before serving to keep the topping fresh.
Serving ideas
Serve the coconut tres leches cake cold, straight from the refrigerator. Cut into squares and place on dessert plates.
The cake is rich and creamy, so a small portion is satisfying. For an extra touch, garnish each slice with a few extra toasted coconut flakes and a twist of lime zest.
This dessert pairs beautifully with a cup of strong coffee or a tropical cocktail. It's ideal for summer parties, Cinco de Mayo celebrations, or any gathering where you want a refreshing, coconut-forward dessert.
The cake is best enjoyed within a day or two of topping, but the soaked cake itself keeps well for several days.

Coconut Tres Leches Cake Soaked in Sweet Coconut Milk

Ingredients
- 5 large eggs
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 2/3 cups coconut milk
- 1 1/4 cups sweetened condensed milk
- 3/4 cup heavy cream
- 2 tbsp coconut rum
- 1 1/2 cups heavy cream
- 2 tbsp confectioners' sugar
- 1/2 cup sweetened shredded coconut, toasted
- 1 tbsp fresh lime zest
Instructions
- Heat the oven to 350°F (175°C). Grease a 9x13-inch baking pan. In a large bowl, beat the eggs and sugar with an electric mixer on high speed until thick, pale, and tripled in volume, about 5 minutes. Beat in the vanilla. Sift the flour over the egg mixture and fold gently with a rubber spatula until just combined, being careful not to deflate the batter. Pour the batter into the prepared pan and spread evenly.
- Bake the sponge for 25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. The cake should spring back when lightly pressed. Remove from the oven and let cool in the pan on a wire rack for 15 minutes.
- In a medium saucepan, combine the coconut milk, sweetened condensed milk, and heavy cream. Warm over medium heat, whisking occasionally, until the mixture is smooth and just steaming, about 3 minutes. Do not let it boil. Remove from heat and stir in the coconut rum.
- While the cake is still warm, pierce the entire surface all over with a wooden skewer or fork. Slowly pour the warm coconut milk bath over the cake, making sure to cover every inch. Let the cake absorb the liquid for a few minutes, then cover and refrigerate for at least 6 hours or overnight.
- In a cold bowl, beat the heavy cream and confectioners' sugar with an electric mixer on medium-high speed until soft peaks form, about 3 minutes. The cream should be smooth and hold a gentle peak when the whisk is lifted.
- Spread the whipped cream evenly over the chilled cake. Sprinkle with toasted coconut and lime zest. Cut into squares and serve cold.
