Tips for success
For the best flavor, sear the brisket in a hot skillet before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
However, the recipe works beautifully without this step, so keep it optional for busy days.
The sauce can be thickened at the end if desired. Mix a tablespoon of cornstarch with two tablespoons of water and stir into the pot.
Let it cook on high for 15 minutes until the gravy coats the back of a spoon. This is perfect for serving over mashed potatoes or noodles.
Variations
- Spicy Kick: Add 2 sliced jalapeños or a teaspoon of red pepper flakes with the peppers for a spicy version. The heat balances the sweetness of the peppers and butter.
- Smoky Twist: Use smoked paprika in the compound butter or add a teaspoon of liquid smoke to the pot for a subtle smoky flavor that mimics barbecue.
- Mushroom Medley: Add 8 oz of sliced cremini mushrooms with the peppers and onions. They will absorb the buttery sauce and add an earthy depth.
- Herb Swap: Replace the herbs in the compound butter with rosemary and sage for a more savory, wintery flavor. These herbs pair beautifully with beef.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator.
- Reheat
- Reheat in a saucepan over medium-low heat, adding a splash of broth or water to loosen the sauce.
Store leftover brisket in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently in the microwave or on the stovetop with a splash of water or beef broth to keep it moist.
This dish can be made a day ahead and refrigerated. The flavors deepen overnight, and the fat solidifies, making it easy to remove excess fat if desired.
Reheat slowly on the stovetop or in the oven at 325°F (165°C) until hot.
Serving ideas
Serve the brisket over warm buttered egg noodles, as shown, or with creamy mashed potatoes, rice, or crusty bread to soak up the rich gravy. A side of steamed green beans or a crisp green salad balances the richness.
For a heartier meal, pile the beef onto toasted rolls for a delicious sandwich, or stuff it into tacos with a sprinkle of fresh cilantro. The leftovers are versatile and just as tasty the next day.

Sweet Pepper Garlic Butter Beef Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 2 red and green bell peppers, sliced into thick strips
- 1 large sweet yellow onion, sliced
- 4 medallions garlic-herb compound cowboy butter
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Press it down gently so it sits evenly in the insert.
- Scatter the thick strips of red and green bell peppers and the sliced sweet yellow onion over the raw brisket, spreading them evenly across the surface.
- Place the four thick medallions of garlic-herb compound cowboy butter on top of the peppers and onions, spacing them evenly over the roast.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Do not lift the lid during the first 6 hours. Let it rest for 3 minutes before slicing.
- Remove the brisket to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the meat into bite-sized pieces, discarding any large fat pieces.
- Return the shredded brisket to the slow cooker with the peppers, onions, and buttery juices. Stir gently to combine and let it sit on warm for 10 minutes so the flavors meld.
- Spoon the hot brisket and vegetables over warm buttered egg noodles, or serve as desired. Drizzle with extra gravy from the pot.
