Tips for success
For the cleanest slices, use a sharp chef's knife and wipe it between cuts. If the bark cracks, let it sit at room temperature for a few minutes to soften slightly.
You can also score the bark before it fully sets—just run a knife through the surface—to make breaking easier later. Store the bark in an airtight container at room temperature for up to a week, but it’s best within the first few days.
Toasting the marshmallows adds a deep, caramelized flavor that elevates the bark. If you’re short on time, skip the toasting and use them straight from the bag.
For a more intense strawberry flavor, add a little freeze-dried strawberry powder to the melted ruby chocolate before folding. This will give the chocolate a deeper pink hue and a stronger fruit taste.
Variations
- Dark Chocolate Bark: Swap the ruby chocolate for high-quality dark chocolate (at least 60% cacao). The bitterness of the dark chocolate pairs beautifully with the sweet marshmallows and tart strawberries. Proceed with the same method.
- Nut-Free Bark: Omit the pistachios and use toasted sunflower seeds or pumpkin seeds instead. This makes the bark nut-free, but be sure to check all labels for cross-contamination if allergies are a concern.
- White Chocolate Bark: Use white chocolate instead of ruby chocolate for a sweeter, creamier version. Add a few drops of pink food coloring to achieve a similar color if desired. The flavor will be more vanilla-forward.
- Spicy Bark: Add a pinch of cayenne pepper or a sprinkle of chili powder to the melted chocolate before folding in the mix-ins. The heat contrasts nicely with the sweetness and adds a surprising kick.
Storage and make-ahead
- Fridge
- Store in the refrigerator during warm weather to keep the bark firm. Let it sit at room temperature for 5 minutes before serving.
- Freezer
- Freeze the bark in an airtight container for up to 2 months. Thaw in the refrigerator or at room temperature before serving.
- Reheat
- No reheating needed; serve at room temperature or slightly chilled.
Store the bark in an airtight container at room temperature for up to 1 week. Keep it away from heat and sunlight to prevent melting. If you live in a warm climate, you can store it in the refrigerator, but let it come to room temperature before serving for the best texture.
You can make this bark up to 3 days ahead. Prepare as directed, then keep it in an airtight container at room temperature.
For longer storage, freeze the bark in a freezer-safe container with parchment between layers for up to 2 months. Thaw in the refrigerator or at room temperature before serving.
Serving ideas
Serve the bark as a dessert platter alongside fresh berries and a dollop of whipped cream. It also makes a lovely addition to a holiday cookie tray or a gift box. The bars are sturdy enough to pack in lunchboxes or take on a picnic.
For a more decadent presentation, drizzle extra melted white chocolate over the top just before serving and sprinkle with a pinch of flaky sea salt.
The combination of sweet, salty, and fruity flavors is irresistible. Pair with a glass of cold milk or a cup of coffee for a satisfying treat.

Strawberry Pistachio Ruby Chocolate Bark Recipe

Ingredients
- 16 oz ruby chocolate, chopped
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup freeze-dried strawberries, roughly chopped
- 1 1/2 cups mini marshmallows, toasted
- 2 oz white chocolate, melted
Instructions
- Roughly chop the shelled pistachios with a sharp chef's knife. Chop the freeze-dried strawberries into small pieces. Toast the mini marshmallows in a dry skillet over medium heat, stirring constantly, until they are golden brown on the edges. Set all the mix-ins aside.
- Using a box grater, grate the solid block of ruby chocolate into a pile of fine curls. This step is optional but creates a lovely texture; alternatively, chop the chocolate into small pieces.
- Place the grated ruby chocolate in a heatproof bowl set over a saucepan of barely simmering water. Stir gently until melted and glossy. Alternatively, melt in the microwave in 30-second bursts, stirring between each.
- Remove the melted chocolate from the heat. Fold in the toasted marshmallows and chopped pistachios until evenly distributed. The mixture will thicken slightly as the chocolate cools.
- Pour the mixture into a parchment-lined 9x13-inch metal tray. Spread it into an even layer with an offset spatula. Drizzle the melted white chocolate over the top in ribbons. Sprinkle with the remaining chopped pistachios and freeze-dried strawberries.
- Refrigerate the tray for at least 30 minutes, or until the chocolate is firm and set. The bark should be completely hard to the touch before slicing.
- Lift the chilled bark from the tray using the parchment. Place on a cutting board and slice into thick bars with a sharp chef's knife. For a clean snap, let the bars come to room temperature for a few minutes before breaking.
