Before you start

Before starting, line a 9x13-inch metal tray with parchment paper, leaving some overhang on two sides for easy lifting. Chop the pistachios and freeze-dried strawberries, and toast the marshmallows if using.

Grate the ruby chocolate if you plan to grate it, and have the white chocolate melted and ready. Set up a double boiler or have a microwave-safe bowl on hand. Make sure your work surface is clear and you have a spatula and offset spatula ready.

Ingredients at a glance (5)
  • 16 oz ruby chocolate, chopped
  • 1 cup shelled pistachios, roughly chopped
  • 1/2 cup freeze-dried strawberries, roughly chopped
  • 1 1/2 cups mini marshmallows, toasted
  • 2 oz white chocolate, melted

Instructions

Prepare the Mix-Ins

  1. Prepare the mix-ins
Roughly chop the shelled pistachios with a sharp chef's knife. Chop the freeze-dried strawberries into small pieces. Toast the mini marshmallows in a dry skillet over medium heat, stirring constantly, until they are golden brown on the edges. Set all the mix-ins aside.
Look for The pistachios are in coarse chunks, the strawberries are in small bits, and the marshmallows are browned but not burnt.
Tip Toast the marshmallows just until they begin to color; they will continue to soften when folded into the chocolate.
  2. Grate the ruby chocolate
Using a box grater, grate the solid block of ruby chocolate into a pile of fine curls. This step is optional but creates a lovely texture; alternatively, chop the chocolate into small pieces.
Look for You have a fluffy pile of ruby chocolate curls.
Tip If the chocolate is too soft to grate, chill it in the refrigerator for 10 minutes first.

At the end of this phase, you should have chopped pistachios, chopped freeze-dried strawberries, and toasted marshmallows ready. The marshmallows should be golden brown on the edges but still soft in the center.

The ruby chocolate should be grated or chopped into small, even pieces. Everything should be within easy reach for the next phase.

Melt and Combine

  1. Melt the ruby chocolate
Place the grated ruby chocolate in a heatproof bowl set over a saucepan of barely simmering water. Stir gently until melted and glossy. Alternatively, melt in the microwave in 30-second bursts, stirring between each.
Look for The chocolate is smooth, glossy, and completely melted with no lumps.
Tip Avoid overheating; ruby chocolate has a low melting point and can seize if too hot.
  2. Fold in the mix-ins
Remove the melted chocolate from the heat. Fold in the toasted marshmallows and chopped pistachios until evenly distributed. The mixture will thicken slightly as the chocolate cools.
Look for The marshmallows and pistachios are evenly coated with ruby chocolate.
Tip Work quickly while the chocolate is still fluid to make spreading easier.
  3. Spread and drizzle
Pour the mixture into a parchment-lined 9x13-inch metal tray. Spread it into an even layer with an offset spatula. Drizzle the melted white chocolate over the top in ribbons. Sprinkle with the remaining chopped pistachios and freeze-dried strawberries.
Look for The bark is evenly thick and topped with white chocolate ribbons and pink and green bits.
Tip Tap the tray gently on the counter to settle the mixture and remove air bubbles.

The melted chocolate should be smooth and glossy, with no lumps. After folding in the marshmallows and pistachios, the mixture should be thick but still spreadable. The white chocolate drizzle should be fluid enough to create thin ribbons. The surface of the bark should look evenly distributed with no dry spots.

Chill and Slice

  1. Chill until set
Refrigerate the tray for at least 30 minutes, or until the chocolate is firm and set. The bark should be completely hard to the touch before slicing.
Look for The bark is firm and lifts cleanly from the parchment.
Tip Chilling is essential for clean slices; do not skip this step.
  2. Slice and serve
Lift the chilled bark from the tray using the parchment. Place on a cutting board and slice into thick bars with a sharp chef's knife. For a clean snap, let the bars come to room temperature for a few minutes before breaking.
Look for The bars are evenly cut and show a layered cross-section of chocolate and mix-ins.
Tip If the bark cracks, let it warm slightly before slicing.

The bark should be completely set, firm to the touch, and easy to lift from the tray. When you slice it, the knife should go through with minimal resistance, and the bars should hold their shape. The cross-section should show a beautiful mosaic of pink chocolate, white ribbons, green pistachios, and red strawberry pieces.

Common mistakes

A common mistake is overheating the chocolate, which can make it thick and grainy. Always melt gently and stir frequently. Another issue is adding the mix-ins when the chocolate is too hot, which can melt the marshmallows and cause them to disappear.

Let the chocolate cool slightly before folding. Also, be sure to spread the bark evenly; thin spots will break easily, and thick spots may not set properly. Finally, don’t skip the chilling time—rushing can result in a messy slice.

How to tell it’s done

The bark is done when it is completely firm to the touch and lifts cleanly from the parchment. If you press the surface gently, it should feel solid, not soft. The chocolate should have a shiny, smooth appearance.

When you break a piece, it should snap cleanly with a crisp sound, revealing a layered cross-section of chocolate, marshmallows, pistachios, and strawberries. If the bark bends or feels soft, it needs more chilling time.
