Tips for success
For the best cheese pull, use fresh mozzarella that you shred yourself. The anti-caking agents in pre-shredded cheese can inhibit melting.
If you want extra char, place the skewers under the broiler for the last minute, but watch them closely—honey burns quickly. You can also brush the kebabs with a little extra honey right after baking for an extra-glossy finish.
To keep the tortillas from unrolling while baking, you can secure each roll with a toothpick before slicing, but this is not necessary if you roll tightly. If the wheels slide on the skewer, push them gently together.
For a more even cook, rotate the baking sheet halfway through. Let the kebabs rest for a minute before serving so the cheese sets slightly and doesn't drip everywhere.
Variations
- Spicy Chorizo Version: Substitute 250 g of minced beef with fresh chorizo (remove casing) and reduce the salt. Add a minced chipotle pepper in adobo to the filling for extra heat. The chorizo will add its own smoky, spicy flavor.
- Chicken and Cilantro: Use ground chicken instead of beef, and add 1/4 cup chopped fresh cilantro to the filling. Reduce the cumin to 1/2 tsp and add a squeeze of lime juice to the glaze for brightness. This version is lighter but still juicy.
- BBQ Glaze: Replace the honey-paprika glaze with a mixture of 3 tbsp barbecue sauce, 1 tbsp honey, and 1 tsp smoked paprika. Brush generously before baking. The tangy BBQ flavor pairs well with the beef and cheese.
- Vegetarian Option: Swap the beef for 2 cups of cooked black beans, mashed slightly, and add 1/2 cup corn kernels. Season with the same spices and tomato paste. Omit the meat and skip the protein temperature requirement; bake until the tortillas are crispy.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes to crisp the edges.
- Freezer
- Freeze unbaked skewered kebabs in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 5-10 minutes.
- Reheat
- Reheat baked kebabs in the oven at 350°F (175°C) for 5-7 minutes. Avoid microwaving to prevent sogginess.
Store leftover kebabs in an airtight container in the refrigerator for up to 3 days. Reheat them in a 350°F (175°C) oven for 5-7 minutes to restore crispness. Avoid microwaving, as it makes the tortillas soggy. The glaze may become sticky and darken slightly upon reheating, which is normal.
You can assemble the skewered kebabs up to 1 day ahead. Prepare the beef filling, roll the tortillas, slice, and skewer. Cover and refrigerate.
When ready to bake, glaze and bake as directed, adding a few extra minutes if starting from cold. The glaze can also be made ahead and stored in the refrigerator for up to 1 week.
Serving ideas
Serve these kebabs hot from the oven with extra glaze on the side for dipping. They pair well with a simple green salad or roasted vegetables.
For a fun appetizer, arrange them on a platter with toothpicks and a bowl of cooling yogurt sauce or sour cream. The sweet and smoky flavors also go well with a cold beer or a tangy lemonade.
For a main course, serve two or three skewers per person alongside rice or crusty bread. The kebabs are hearty enough to stand alone, but the charred edges and sticky glaze are best enjoyed with something fresh to cut the richness. Garnish with extra scallions or a sprinkle of flaky salt just before serving.

Sticky Glazed Beef Tortilla Kebabs

Ingredients
- 2 tbsp olive oil
- 1 finely diced onion
- 2 cloves minced garlic
- 500 g minced beef
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 2 tbsp tomato paste
- 4 large flour tortillas
- 2 cups shredded mozzarella
- 3 tbsp clover honey
- 2 tbsp melted butter
- 1 tsp smoked paprika
- 2 tbsp chopped fresh scallions, for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until soft, about 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant. Add the minced beef, breaking it up with a spoon. Season with cumin, smoked paprika, and salt. Cook, stirring occasionally, until the beef is browned and deeply caramelized, about 8 minutes. Stir in the tomato paste and cook for 2 minutes until it darkens and coats the beef. Remove from heat and let cool slightly.
- Lay a tortilla on a clean work surface. Spread a quarter of the beef mixture evenly over the tortilla, leaving a 1-inch border. Sprinkle with a quarter of the shredded mozzarella. Roll the tortilla tightly into a cylinder. Repeat with the remaining tortillas. Using a sharp chef's knife, slice each roll into 2-inch rounds, trimming the ends if needed.
- Thread the tortilla wheels onto bamboo skewers, pushing them gently so they stay snug but not crushed. Aim for about 4 to 5 wheels per skewer, depending on length. Place the skewers on a baking sheet lined with aluminum foil.
- In a small bowl, combine the clover honey, melted butter, and smoked paprika. Stir until smooth. The glaze should be thick but brushable.
- Using a silicone brush, generously coat each tortilla wheel with the honey-paprika glaze, making sure to get it into the crevices. Reserve some glaze for brushing after baking.
- Preheat the oven to 400°F (200°C). Place the baking sheet with the skewers in the oven and bake for 12 to 15 minutes, until the edges are charred and crispy and the cheese is bubbling and golden. If desired, switch to broil for the last 1-2 minutes for extra char. Remove from the oven and brush with the remaining glaze.
- Sprinkle the hot kebabs with chopped fresh scallions. Pull a wheel off a skewer to check the cheese pull. Serve immediately while the cheese is molten and the glaze is sticky.
