Tips for success
For the best flavor, use a good-quality smoked bacon and grate the Parmigiano-Reggiano fresh. The bacon should be diced small so it distributes evenly. If you prefer a vegetarian version, omit the bacon and add a tablespoon of olive oil to the potatoes to help them cook.
You can also add a pinch of smoked paprika to mimic the smokiness. The condensed soup is the backbone of the sauce—don't substitute with a thin soup, or the sauce will be watery.
This recipe is incredibly versatile. You can add a cup of frozen peas or corn in the last 30 minutes of cooking for extra color and sweetness. For a spicy kick, stir in a teaspoon of hot sauce or red pepper flakes with the soup.
If you're feeding a crowd, double the recipe and use an 8-quart slow cooker. Leftovers taste even better the next day, so make extra if you can.
Variations
- Add Veggies: Stir in 1 cup of frozen peas or corn during the last 30 minutes of cooking. You can also add sliced mushrooms or bell peppers with the potatoes for extra texture and flavor.
- Make It Spicy: Add 1 teaspoon of red pepper flakes or a diced jalapeño to the soup layer. You can also use pepper jack cheese instead of gouda for a spicy, creamy kick.
- Swap the Protein: Replace the bacon with diced ham or leftover cooked sausage. If using raw sausage, cook it first and drain the fat before adding to the slow cooker.
- Herb Infusion: Mix 1 tablespoon of chopped fresh thyme or rosemary into the ranch seasoning. This adds an earthy, aromatic note that complements the mushrooms and cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or in a 350°F oven for 15-20 minutes until hot.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The dish will thicken as it cools; add a splash of milk or chicken broth when reheating to loosen the sauce. Reheat in the microwave or in a saucepan over medium heat until hot. The potatoes will soften further, but the flavor remains delicious.
You can assemble the entire dish up to 24 hours in advance. Layer all the ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 4-5 hours. You may need to add 30 minutes to the cooking time since starting from cold. This is perfect for busy days or when hosting.
Serving ideas
Serve this potato bake as a main dish with a simple green salad or steamed vegetables on the side. It's also fantastic as a side dish alongside grilled steak, roasted chicken, or pork chops.
The creamy, cheesy potatoes pair well with something fresh and bright to balance the richness. For a complete meal, add a crusty baguette to soak up the extra sauce.
For a fun twist, serve the potato bake in individual ramekins or as a topping for baked potatoes. You can also use it as a filling for stuffed peppers or as a hearty breakfast hash with fried eggs on top. However you serve it, this dish is sure to be a crowd-pleaser. Garnish with fresh chives or parsley for a pop of color, if you like.

Smoked Gouda Ranch Potato Bake: Easy Crockpot Dinner

Ingredients
- 3 lb baby red bliss potatoes, quartered
- 8 oz smoked bacon, diced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 2 cups shredded smoked gouda
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the quartered baby red bliss potatoes in the bottom of a 6-quart slow cooker. Scatter the diced smoked bacon evenly over the potatoes. No need to stir—layering keeps the bacon on top where it can crisp slightly as it cooks.
- Spoon the condensed cream of mushroom soup over the potato-bacon mixture. Sprinkle the dry buttermilk ranch seasoning mix evenly over the soup. Use a spatula to gently spread the soup and seasoning into an even layer, but do not stir the potatoes—you want the sauce to sit on top and slowly melt down during cooking.
- Sprinkle the shredded smoked gouda evenly over the soup mixture, followed by the freshly grated Parmigiano-Reggiano. Press down lightly with a spatula to help the cheeses adhere to the sauce layer.
- Cover the slow cooker with its lid and set it to cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. Do not lift the lid during the first 2 hours to allow the heat to build up. The potatoes are done when they are fork-tender and the cheese is melted and bubbly.
- Once the potatoes are tender, turn off the slow cooker. Let the dish rest for 5 minutes before serving. Use a large serving spoon to scoop out portions, making sure to get some of the cheesy sauce from the bottom. Serve hot directly from the slow cooker or transfer to a serving dish.
