Tips for success

To add an extra layer of flavor, consider sautéing the diced carrots and celery in a little olive oil on the stovetop for a few minutes before adding them to the slow cooker. This caramelization process adds a subtle sweetness and depth that elevates the entire dish. If you enjoy a touch of heat, a pinch of red pepper flakes added at the start of the cooking process can provide a nice, gentle warmth to the soup.

When serving, a drizzle of high-quality extra virgin olive oil over the top of each bowl adds a beautiful sheen and a fresh, grassy flavor that complements the earthy beans.

A sprinkle of freshly grated Parmesan cheese or a squeeze of lemon juice can also brighten the flavors significantly. These small additions can customize the soup to your personal preference and make it feel like a restaurant-quality meal at home.

Variations

  • Sausage and Bean Soup: Add browned Italian sausage to the slow cooker along with the other ingredients for a heartier, meatier version of the soup. Ensure the sausage reaches 160°F (71°C).
  • Mediterranean Style: Stir in some chopped sun-dried tomatoes and Kalamata olives during the final cooking phase to add a burst of Mediterranean flavor to the soup.

Storage and make-ahead

Fridge
Store in an airtight container for up to 4 days.
Freezer
Freeze in freezer-safe containers for up to 3 months; thaw in the refrigerator overnight before reheating.
Reheat
Reheat on the stovetop over medium heat, stirring occasionally, or in the microwave in 1-minute intervals until hot throughout.

Allow any leftover soup to cool completely to room temperature, but do not leave it out for more than two hours. Once cooled, transfer the soup into airtight containers. It can be kept in the refrigerator for up to three to four days.

When you are ready to eat, reheat only the portion you intend to consume to maintain the quality of the spinach. If the soup thickens too much in the fridge, add a small splash of water or broth while reheating.

This soup is an excellent candidate for making ahead, as the flavors often improve after sitting in the refrigerator for a day. You can prepare the entire soup up to two days in advance.

Simply follow the cooking instructions, allow it to cool, and store it in the refrigerator. Reheat gently on the stovetop or in the microwave until hot. Adding fresh spinach just before serving ensures the best texture, so consider adding it during the final reheating phase.

Serving ideas

Serve this soup hot in deep bowls, perhaps accompanied by a slice of crusty sourdough bread or warm garlic toast, which is perfect for soaking up the flavorful broth. A side of roasted root vegetables or a simple green salad with a light vinaigrette makes for a balanced and satisfying meal. The heartiness of the beans makes this a substantial main course that does not require heavy sides to feel complete.

For a more elegant presentation, ladle the soup into warmed bowls and garnish with a few fresh basil leaves or a sprig of parsley.

If you have guests, providing small bowls of red pepper flakes, grated cheese, or toasted pine nuts on the side allows everyone to customize their bowl to their liking. This simple, rustic soup is sure to become a staple in your rotation for its ease of preparation and comforting taste.

Frequently asked questions

Can this soup be made using dried beans instead of canned?
It is not recommended to use dried beans directly in the slow cooker without pre-soaking and boiling them first, as they may not soften properly. It is much safer and easier to use canned beans to ensure the perfect texture.
Why is the spinach added at the end?
Spinach is a delicate green that wilts very quickly. Adding it at the very end ensures it retains its bright green color and tender texture, rather than turning dark and mushy during the long slow-cooking process.
How can the soup be made thicker?
To achieve a thicker consistency, take a potato masher or a large spoon and crush a small portion of the beans directly in the pot. The starch released from the beans acts as a natural thickener for the broth.
