Tips for success
For the best flavor, season the pork generously with salt and pepper. Don't be shy—the meat is thick and needs seasoning to penetrate. If you have time, sear the pork in a hot skillet with a little oil before adding it to the slow cooker.
This adds a deep, caramelized crust that enhances the overall taste. You can also add a splash of chicken broth or apple cider vinegar to the pot for extra acidity, but it's not necessary.
To achieve perfectly caramelized vegetables, make sure they are nestled against the sides of the pot where they get more heat. If you prefer firmer vegetables, add them halfway through cooking.
For a thicker sauce, remove the pork and vegetables, then simmer the juices on the stovetop for 10-15 minutes until reduced. Whisk in a tablespoon of butter for extra richness. Use the leftovers for sandwiches, tacos, or over rice.
Variations
- Spicy Version: Add 2-3 minced chipotle peppers in adobo or 1 teaspoon of smoked paprika to the spice rub. The heat pairs well with the sweet carrots and butter. Serve with pickled jalapeños for extra kick.
- Herb-Infused: Place a few sprigs of fresh rosemary, thyme, or sage under the pork before cooking. The herbs will perfume the meat and juices. Remove the sprigs before shredding, and garnish with fresh chopped parsley.
- Asian-Inspired: Replace the salt and pepper with 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, and 1 teaspoon of five-spice powder. Add a few slices of ginger. The result is a savory-sweet pork with a hint of umami.
- Beef Version: Substitute a 4-pound beef chuck roast for the pork. Cook on low for 8-10 hours or until fork-tender. The beef pairs well with the same shallots, carrots, and butter. Shred and serve with the juices.

Store leftover pork and vegetables in an airtight container in the refrigerator for up to 4 days. The juices will solidify when chilled; that's fine. Reheat gently on the stovetop or microwave, adding a splash of water or broth to loosen the sauce.
The pork can also be frozen for up to 3 months. Cool completely before freezing in a freezer-safe container. Thaw overnight in the refrigerator before reheating.
This recipe is ideal for meal prep. Cook the pork up to 3 days ahead, shred, and store in the refrigerator. Reheat in a covered pot over low heat, adding a little water or broth to keep it moist.
The flavors meld even more after a day in the fridge. You can also assemble the raw ingredients in the slow cooker insert, cover, and refrigerate overnight, then cook the next day. Add 30-60 minutes to the cooking time if starting from cold.
Serving ideas
Serve the pulled pork over a bed of creamy mashed potatoes, letting the buttery jus soak into them. The sweet carrots and shallots are perfect alongside. For a low-carb option, serve over cauliflower mash or alongside roasted vegetables. The pork also makes fantastic sandwiches on toasted buns with a little coleslaw. Spoon extra jus over the top for a messy, delicious bite.
For a complete meal, add a crisp green salad with a tangy vinaigrette to cut through the richness. The pork pairs well with pickled onions or cornichons for acidity. If serving a crowd, set out the pork with slider buns, pickles, and extra sauce. This dish is hearty and satisfying, ideal for Sunday dinner or a casual gathering. The leftovers are just as good, if not better, the next day.

Slow-Cooker Shallot Carrot Butter Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast (Boston butt)
- 8 whole shallots, peeled
- 1 lb baby carrots
- 1 stick salted butter
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the pork shoulder in the center of the slow cooker insert. Season all over with kosher salt and black pepper. Scatter the peeled whole shallots and baby carrots around the roast, tucking them into the sides.
- Place the stick of salted butter directly on top of the seasoned roast. It will melt as the slow cooker heats, basting the meat and vegetables.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and shreds easily. The vegetables should be soft and caramelized. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the juices for at least 10 minutes. This allows the fibers to relax and reabsorb some of the flavorful liquid.
- Using two forks, shred the pork directly in the slow cooker, mixing it with the melted butter and pan juices. Stir in the softened shallots and carrots, breaking them up slightly if desired.
- Spoon the shredded pork, vegetables, and buttery jus over mashed potatoes, rice, or crusty bread. Serve immediately while hot.
