Tips for success
For the most flavorful results, use a well-marbled brisket and do not trim all the fat—some fat is essential for moisture and flavor.
If you have time, let the brisket sit at room temperature for 30 minutes before cooking, but never leave it out longer. The slow cooker does all the work, so resist the urge to brown the meat first; this recipe is designed to be effortless.
When shredding, use two forks and pull the meat against the grain for the most tender pieces. If you prefer slices, you can slice the rested brisket against the grain instead of shredding.
The pan juices are the best part—spoon them generously over the meat and vegetables, and consider serving with crusty bread to soak up every last drop.
Variations
- Add Red Wine: Pour 1/2 cup dry red wine over the brisket before adding the butter. The wine adds depth and a slight tang that complements the beef and shallots beautifully.
- Herb-Infused Butter: Soften the butter and mix in 1 tablespoon chopped fresh thyme or rosemary before placing it on the brisket. This adds an aromatic note that perfumes the entire dish.
- Spicy Kick: Sprinkle 1 teaspoon smoked paprika and 1/2 teaspoon cayenne pepper over the brisket before cooking for a smoky, spicy twist. Adjust the heat to taste.
- Root Vegetable Medley: Replace the baby carrots with a mix of parsnips, turnips, and carrots, all cut into similar-sized chunks. This adds earthy sweetness and variety to the vegetables.

- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water or broth to keep it moist.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Store leftover brisket and vegetables in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop with a splash of water or broth to restore moisture.
This recipe is perfect for making ahead. Cook the brisket a day in advance, let it cool, and refrigerate in the slow cooker insert or a separate container. The next day, reheat gently on the stovetop or in the oven. The leftovers also freeze beautifully for up to 3 months.
Serving ideas
Serve the brisket over a bed of creamy mashed potatoes, as shown, or with buttered egg noodles, rice, or polenta.
The buttery pan juices are essential—spoon them generously over the meat and vegetables. A simple green salad or steamed greens on the side adds freshness and balances the richness.
For a casual gathering, set up a self-serve bar with the brisket, mashed potatoes, and toppings like pickled onions, horseradish cream, or fresh herbs.
The recipe is forgiving and can easily be doubled for a crowd—just ensure your slow cooker is large enough. Leftovers make excellent sandwiches on toasted rolls with a bit of the pan jus.

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 8 oz whole shallots, peeled
- 1 lb baby carrots
- 1/2 cup salted butter (1 stick)
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Season the top with kosher salt and black pepper.

- Place the stick of salted butter directly on top of the seasoned brisket. No need to melt it first.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the brisket is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Remove the brisket to a cutting board and let it rest for at least 10 minutes before shredding.
- Using two forks, shred the brisket into bite-size pieces. Return the shredded beef to the slow cooker and stir into the buttery juices.
- Serve the shredded brisket and vegetables over whipped Yukon Gold mashed potatoes, spooning the buttery pan juices over the top.
