Tips for success
For the best texture, always cook brisket on LOW. The longer, gentler heat ensures the collagen fully breaks down without the meat becoming stringy or dry.
If you’re pressed for time, HIGH will work, but the result won’t be quite as tender. Also, let the brisket rest in the cooking liquid after turning off the heat — this allows the juices to redistribute and the meat to absorb extra flavor.
Don’t be tempted to add extra liquid — the meat and mushrooms release plenty of moisture, and the butter enriches it.
If you prefer a thicker sauce, you can transfer the liquid to a saucepan and simmer it on the stove for a few minutes to reduce, but it’s delicious as is. Serve with something to soak up the jus: mashed potatoes, rice, or crusty bread.
Variations
- Herb Butter: Add 2 teaspoons dried thyme and 1 teaspoon dried rosemary to the butter before placing it on the meat. The herbs infuse the jus with an earthy, fragrant note.
- Balsamic Glaze: After shredding, stir in 2 tablespoons balsamic vinegar and 1 tablespoon brown sugar. Simmer for 10 minutes to create a sweet-tangy glaze.
- Smoky Version: Add 1 teaspoon smoked paprika and 1/2 teaspoon liquid smoke to the garlic before spreading. This adds a subtle barbecue depth without extra effort.
- Make It Spicy: Stir 1 tablespoon chipotle hot sauce or 1/2 teaspoon cayenne pepper into the minced garlic. The heat will mellow during cooking, leaving a warm kick.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The brisket will remain tender and the flavors will deepen.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered pot over low heat, adding a splash of beef broth or water if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The brisket will keep well and the flavors will meld even more. Reheat gently in the microwave or in a covered skillet with a splash of water or broth to keep it moist.
This dish is ideal for making ahead. Cook the brisket as directed, then cool it completely in the liquid. Refrigerate for up to 3 days, then reheat on the stovetop or in a 350°F (175°C) oven until hot and bubbling. The meat can also be frozen for up to 3 months.
Serving ideas
Serve the shredded brisket over a bed of creamy mashed potatoes, letting the buttery jus soak into the potatoes. A side of roasted green beans or a crisp green salad adds freshness and contrast.
For a heartier meal, pile the beef onto toasted rolls for a decadent sandwich, or serve with egg noodles tossed in a little of the jus.
Garnish with chopped fresh parsley if desired, though the dish is plenty flavorful on its own. The mushrooms are an integral part of the dish, so be sure to spoon them over each serving.
Leftover jus can be drizzled over vegetables or used as a sauce for roast potatoes. This is comfort food at its finest — rich, savory, and deeply satisfying.

Slow Cooker Portobello Butter Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 8 oz portobello mushrooms, thickly sliced
- 2 tbsp minced garlic
- 1/2 cup salted butter (1 stick)
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. It should fit snugly in a single layer. If necessary, trim any excess fat to ensure even cooking.
- Scatter the thickly sliced portobello mushrooms evenly over the brisket, then spoon the minced garlic over the top. Spread the garlic so it covers the meat and mushrooms evenly.
- Place the whole stick of salted butter directly on top of the seasoned roast. It will melt as the slow cooker heats, basting the meat and mushrooms with rich, buttery flavor.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the brisket is fork-tender and easily shreds. Do not lift the lid during cooking — the steam is essential. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the brisket rest in the hot liquid for at least 10 minutes. This allows the juices to redistribute and the meat to become even more tender.
- Using two forks, shred the brisket directly in the slow cooker, mixing it with the mushrooms and buttery jus. The meat should pull apart easily into long, juicy strands.
- Spoon the shredded brisket and mushrooms onto plates or over mashed potatoes, drizzling with the buttery pan jus. Serve hot.
