Tips for success
For the best flavor, choose a high-quality molasses garlic BBQ sauce that isn't too thin. A thicker sauce will cling to the ribs and create a beautiful glaze as it reduces.
If you prefer a spicier kick, add a pinch of cayenne or a few dashes of hot sauce to the sauce before pouring it over the ribs. You can also add a splash of apple cider vinegar to brighten the flavors.
When serving, spoon some of the sauce and caramelized pineapple from the slow cooker over the ribs. The pineapple is delicious—don't leave it behind.
If you have leftovers, the sauce thickens as it cools; you can thin it with a little water or broth when reheating. For a crispier texture, you can broil the ribs for 3 to 4 minutes after slow cooking, but this is optional and not shown in the video.
Variations
- Spicy Pineapple Ribs: Add 1-2 minced jalapeños or a teaspoon of red pepper flakes to the sauce before pouring over the ribs. The heat balances the sweetness of the pineapple and molasses for a spicy-sweet kick.
- Hawaiian-Style Ribs: Replace the molasses garlic BBQ sauce with a teriyaki-based sauce and add 1/2 cup crushed pineapple. This gives the ribs a sweet, tangy, island-inspired flavor that pairs well with rice.
- Smoky Chipotle Ribs: Stir 1-2 chipotle peppers in adobo sauce into the BBQ sauce for a smoky, slightly spicy depth. The chipotle adds a rich, earthy heat that complements the molasses and pineapple.
- Ginger-Soy Ribs: Use a mixture of 1/2 cup soy sauce, 1/2 cup honey, and 2 minced garlic cloves instead of the BBQ sauce. Add an extra tablespoon of grated ginger for a savory-sweet Asian-inspired glaze.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of water when reheating if needed.
- Freezer
- Freeze cooked ribs in an airtight container or freezer bag for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat ribs in a 350°F (175°C) oven for 10-15 minutes, or in the microwave in 30-second bursts until hot. Add a little water or sauce to keep them moist.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, which is fine. To reheat, place the ribs in a covered saucepan or microwave-safe dish and warm gently until heated through.
You can also reheat in a 350°F (175°C) oven for 10 to 15 minutes. If the sauce seems too thick, add a splash of water or broth to loosen it.
This recipe is ideal for making ahead. You can assemble the ribs, pineapple, ginger, and sauce in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
The ribs will be even more flavorful because the sauce has had time to penetrate the meat. You can also cook the ribs fully, cool them, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve these ribs hot, straight from the slow cooker or on a platter. The glossy, caramelized ribs pair beautifully with simple sides like coleslaw, cornbread, or roasted potatoes. Spoon extra sauce and pineapple over the top for maximum flavor. The ribs are substantial enough to be a main course on their own, but they also work well as part of a barbecue spread.
For a complete meal, add a green salad or grilled vegetables to balance the richness. The sweet-savory flavor profile also goes well with rice or creamy mashed potatoes. Don't forget plenty of napkins—these ribs are sticky and delicious. If you have leftover pineapple, you can chop it and stir it into the sauce for extra texture.

Slow-Cooker Pineapple Molasses Baby Back Ribs

Ingredients
- 2 racks baby back pork ribs (about 2 lb total)
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the two racks of baby back ribs side by side in the bottom of a 6-quart slow cooker. If needed, cut each rack in half to fit. Lay the pineapple rings over the top of the ribs, tucking a few between the racks. Sprinkle the grated ginger evenly over the pineapple and ribs.
- Pour the molasses garlic BBQ sauce in thick ribbons over the ribs and pineapple, making sure to coat the tops and let it run down between the racks. Use a spoon or spatula to spread it evenly if needed.
- Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the meat is fork-tender and easily pulls away from the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Using a fork, carefully lift the ribs out of the slow cooker, letting excess sauce drip back into the pot. Transfer to a serving plate. Spoon some of the sauce and pineapple from the pot over the top. Let the ribs rest for at least 3 minutes before serving.
