Tips for success
For the best flavor, use a good-quality honey hickory barbecue sauce. The brand you choose will significantly affect the final taste, so pick one with a balance of sweetness and smoke.
You can also make your own, but the video uses a store-bought sauce for convenience.
If you have time, marinate the ribs in the sauce overnight in the refrigerator. This allows the flavors to penetrate the meat more deeply. However, the slow cooker method already yields incredibly flavorful ribs, so this step is optional.
Variations
- Spicy Pineapple Ribs: Add 1-2 finely chopped chipotle peppers in adobo sauce to the BBQ sauce before pouring over the ribs. The smoky heat pairs beautifully with the sweet pineapple and honey. Adjust the amount to suit your spice preference.
- Garlic Ginger Ribs: Add 4 minced garlic cloves along with the grated ginger for an extra savory depth. The garlic mellows during the long cooking time, infusing the sauce with a subtle pungency that complements the sweetness.
- Brown Sugar Glaze: After the ribs are cooked, brush them with a mixture of 1/4 cup brown sugar and 2 tablespoons of the cooking liquid. Place the ribs under the broiler for 2-3 minutes until the sugar caramelizes and forms a sticky glaze.
- Pineapple Salsa Topping: Serve the ribs with a fresh pineapple salsa made from diced pineapple, red onion, cilantro, and lime juice. The bright, tangy salsa cuts through the rich, smoky sauce and adds a refreshing contrast.

The ribs can be reheated in the microwave or in a covered skillet over low heat with a little sauce to keep them moist. The flavors will continue to develop, making leftovers even more delicious.
This recipe is perfect for making ahead. You can assemble the ribs in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low for 8 hours. You can also cook the ribs a day ahead, then reheat them gently in the slow cooker or oven before serving.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with extra sauce spooned over the top. The pineapple rings are a delicious accompaniment, adding a burst of sweetness.
This dish pairs well with coleslaw, cornbread, or a simple green salad to balance the richness.
For a casual meal, set the slow cooker on the table and let everyone help themselves. The ribs are best enjoyed with your hands, so have plenty of napkins on hand. This is a crowd-pleasing main course that disappears quickly.

Slow-Cooker Pineapple Honey Hickory Baby Back Ribs

Ingredients
- 4 lb baby back pork ribs (2 racks)
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups honey hickory barbecue sauce
Instructions
- Remove the ribs from the refrigerator and pat them dry with paper towels. If there is a thin membrane on the bone side, peel it off. Place the racks side by side in the slow cooker, meaty side up, cutting them to fit if necessary.
- Lay the pineapple rings over the ribs in a single layer, tucking any extra rings between the racks. Sprinkle the grated ginger evenly over the pineapple and ribs.
- Pour the honey hickory barbecue sauce over the ribs and pineapple, using a spatula to spread it evenly. Make sure the top of the ribs are well coated, but do not stir.
- Cover the slow cooker and cook on LOW for 8 hours, or until the meat is tender and easily pulls away from the bone. Do not open the lid during cooking to maintain even heat. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check the thickest part of the meat, avoiding the bone. It should read at least 145°F (63°C). If it is below that, continue cooking and check again after 15 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes. This allows the juices to redistribute and makes the meat easier to handle.
- Using tongs, carefully lift the ribs out of the slow cooker and place them on a cutting board or serving platter. Spoon some of the sauce and pineapple from the slow cooker over the top.
- Cut the ribs between the bones and serve hot, with extra sauce from the slow cooker if desired. The pineapple rings can be served alongside or on top of the ribs.
