Tips for success
For the most flavorful pork, slice the loin against the grain. This shortens the muscle fibers, making the meat more tender even before slow cooking.
If time allows, let the pork marinate in the achiote sauce for a few hours in the refrigerator before adding the other ingredients—this deepens the color and flavor.
When charring tortillas, use tongs to hold them over an open flame for a few seconds per side, or use a dry cast-iron skillet for a more controlled char.
To keep the pork warm for serving, set the slow cooker to the WARM setting after the cheese melts. The sauce may thicken slightly; if it does, stir in a splash of water or pineapple juice to loosen it.
For a more pronounced smoky flavor, add a chipotle pepper in adobo to the sauce before cooking. The leftovers are excellent in quesadillas, on nachos, or as a filling for burrito bowls.
Variations
- Chicken Al Pastor: Swap the pork loin for boneless, skinless chicken thighs. Cook on LOW for 4-5 hours until the chicken reaches 165°F (74°C) and shreds easily. Reduce the pineapple to 1 1/2 cups to keep the sauce from becoming too sweet.
- Spicy Mango Version: Replace the pineapple chunks with diced mango and add 1-2 chopped chipotle peppers in adobo to the sauce. The mango will melt into the sauce, adding a different fruity sweetness and a smoky heat.
- Sheet Pan Fajitas: Skip the slow cooker and spread the pork, pineapple, peppers, and onion on a sheet pan. Toss with the achiote sauce and roast at 425°F (218°C) for 25-30 minutes, stirring once, until the pork is cooked through and the edges caramelize.
- Veggie Al Pastor: For a meatless version, use 2 cans of drained jackfruit or extra-firm tofu in place of the pork. Cook on LOW for 3-4 hours. Add the cheese at the end as usual. The texture will be different but still delicious.
Storage and make-ahead
- Fridge
- Leftover pork and vegetables keep in the fridge for up to 4 days in an airtight container. Reheat gently. Tortillas and toppings are best stored separately.
- Freezer
- The cooked pork (without toppings) freezes well for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop.
- Reheat
- Reheat the pork in a skillet over medium heat, stirring occasionally, until hot and slightly bubbling. Add a splash of water or pineapple juice if it seems dry.
Store leftover pork and vegetables in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed. Keep the tortillas and toppings separate to prevent sogginess.
This recipe is perfect for meal prep. Assemble the slow cooker ingredients the night before, cover, and refrigerate. In the morning, place the slow cooker insert on the base and cook on LOW for 6 hours. The pork can also be fully cooked, cooled, and refrigerated for up to 3 days before reheating and serving.
Serving ideas
Serve the al pastor pork fajitas family-style, with a platter of warm tortillas, the pork mixture in a bowl, and all the toppings arranged separately. Let everyone build their own tacos.
The combination of tender pork, sweet pineapple, melted cheese, and fresh toppings is a crowd-pleaser that works for weeknight dinners or casual gatherings.
For a more substantial meal, serve the fajitas alongside Mexican rice and refried beans. The bright acidity of the key lime wedges is essential—encourage everyone to squeeze them over their tacos before eating. A cold beer or a citrusy agua fresca makes a great accompaniment.

Slow-Cooker Pineapple Al Pastor Pork & Red Pepper Fajitas

Ingredients
- 2 1/2 lb pork loin, sliced into strips
- 2 cups fresh pineapple chunks
- 2 red bell peppers, sliced
- 1 red onion, sliced
- 1 cup red achiote-guajillo pineapple sauce
- 1 1/2 cups shredded Chihuahua cheese
- 12 corn tortillas, charred
- 1/2 cup diced white onion
- 1/2 cup fresh cilantro leaves
- 2 avocados, sliced
- 1/2 cup crema
- 1 key lime, cut into wedges
Instructions
- Place the sliced pork loin, pineapple chunks, red bell peppers, and red onion into the slow cooker. Pour the achiote-guajillo pineapple sauce over the top. Use tongs or a spoon to toss everything together until the pork is well coated in the sauce.
- Cover the slow cooker and set it to LOW. Cook for 6 hours, until the pork is fork-tender and easily pulls apart. The pineapple will soften and release its juices, creating a rich sauce. Let it rest for 3 minutes before slicing.
- Once the pork is cooked through, sprinkle the shredded Chihuahua cheese evenly over the top. Cover and let it sit for 5 minutes, or until the cheese is fully melted and bubbly. Let it rest for 3 minutes before slicing.
- Heat a dry skillet over medium-high heat. Warm each corn tortilla for 30 seconds per side, until lightly charred and pliable. Keep them wrapped in a clean kitchen towel to stay warm.
- Spoon the pork mixture into the warm tortillas. Top with diced white onion, fresh cilantro, avocado slices, and a drizzle of crema. Serve with key lime wedges for squeezing over the top.
