Tips for success
For the best flavor, use high-quality smoked bacon and fire-roasted chiles. The bacon should be diced small so it distributes evenly.
If you want extra crispy onions, reserve half of them and add them during the last 30 minutes of cooking. You can also sprinkle a little smoked paprika or cumin over the top before serving for an extra layer of warmth.
This casserole is very forgiving. If you need to keep it warm for a party, set the slow cooker to WARM after cooking. If the sauce seems too thin, stir in a tablespoon of cornstarch mixed with cold water and cook for 15 more minutes.
For a spicier version, use habanero jack cheese or add a diced jalapeño to the chile layer. Leftovers can be refrigerated and reheated in the microwave or on the stovetop.
Variations
- Spicy Sausage Version: Replace the bacon with 1 pound of spicy Italian sausage, removed from casings and crumbled. Brown the sausage in a skillet before adding to the slow cooker. This adds extra heat and a meaty texture.
- Loaded Baked Potato Style: Top the finished casserole with sour cream, chopped chives, and extra shredded cheddar cheese. This mimics a loaded baked potato and adds a cool, tangy contrast.
- Vegetarian Option: Omit the bacon and add 1 cup of frozen corn kernels along with the green chiles. Use a vegetarian condensed cheddar soup if available. The corn adds sweetness and a pop of color.
- Southwest Twist: Add 1 can of drained black beans and 1 teaspoon of ground cumin to the potato layer. Top with crushed tortilla chips instead of French-fried onions for extra crunch and a southwestern flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container for up to 4 days. Reheat in the microwave or oven until hot.
- Freezer
- Freeze the cooled casserole in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat in the oven.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes or microwave individual portions for 1-2 minutes.
Leftover casserole can be stored in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 1-2 minutes, or reheat the whole casserole in a 350°F (175°C) oven for 15-20 minutes. The potatoes may soften further, but the flavor will remain delicious.
You can assemble the casserole in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
You may need to add 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the casserole completely, let it cool, and refrigerate for up to 3 days. Reheat gently before serving.
Serving ideas
Serve this potato bake as a hearty side dish alongside roasted chicken, grilled steak, or a simple green salad. It also works well as a vegetarian main course (if you omit the bacon) with a side of crusty bread. The creamy, cheesy texture and smoky flavors make it a crowd-pleaser for potlucks and family dinners.
For a complete meal, pair it with a crisp green salad dressed with a tangy vinaigrette to cut through the richness. You can also top each serving with a dollop of sour cream and a sprinkle of fresh chives.
This casserole is best enjoyed hot, straight from the slow cooker, but it's also tasty at room temperature as a leftover lunch.

Pepper Jack Green Chile Red Potato Bake: Easy Crockpot Casserole

Ingredients
- 3 lb baby red potatoes, quartered
- 8 oz smoked bacon, diced
- 4 oz fire-roasted Hatch green chiles, chopped
- 1 can (10.5 oz) condensed cheddar cheese soup
- 2 cups shredded spicy pepper jack cheese
- 1 cup golden crispy French-fried onions
Instructions
- Place the quartered baby red potatoes and diced smoked bacon into the slow cooker. Toss gently to distribute the bacon pieces among the potatoes. Spread the mixture into an even layer.
- Scatter the chopped fire-roasted Hatch green chiles over the potato-bacon mixture. Pour the condensed cheddar cheese soup over the top. Use a spatula to spread the soup evenly, covering as much of the potato surface as possible.
- Sprinkle the shredded pepper jack cheese evenly over the soup layer. Finish with the golden crispy French-fried onions, spreading them evenly across the top.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the potatoes are tender when pierced with a fork. Do not stir during cooking to keep the layers intact. Let it rest for 3 minutes before slicing.
- Carefully insert a fork into a potato piece to test for tenderness. The potatoes should offer little resistance. If not done, continue cooking for another 30 minutes and test again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Use a serving spoon to scoop the casserole onto plates or a serving platter. Serve hot, with extra crispy onions on top if desired.
