Tips for success
For the best flavor, use freshly grated Parmesan cheese rather than the pre-shredded kind.
The anti-caking agents in pre-shredded cheese can prevent it from melting as smoothly, leaving a slightly grainy texture in the sauce. If you only have pre-shredded, it will still work, but the sauce will be less velvety.
This recipe is incredibly versatile. You can add a handful of frozen peas or spinach during the last 30 minutes of cooking for extra color and nutrients.
Or, stir in some cooked mushrooms for an even more mushroom-forward flavor. The sauce also makes a great base for a pot pie or a topping for baked potatoes.
Variations
- Add Mushrooms: Stir in 8 oz sliced cremini mushrooms along with the chicken for an extra earthy flavor. They will soften and meld into the sauce as they cook.
- Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. They are more forgiving and stay juicy even if cooked a bit longer. Increase cook time to 5-6 hours on LOW.
- Make It Spicy: Add 1/2 teaspoon red pepper flakes or a few dashes of hot sauce along with the ranch seasoning for a subtle kick.
- Creamy Garlic Version: Add 2 minced garlic cloves and 1/2 teaspoon garlic powder to the sauce. This boosts the savory flavor and pairs well with the Parmesan.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Or microwave in 30-second intervals, stirring between, until hot.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; when reheating, add a splash of chicken broth or milk to loosen it to the desired consistency.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, simply place the insert into the slow cooker and cook as directed. You may need to add 15-20 minutes to the cooking time since you're starting from cold.
Serving ideas
This creamy chicken is wonderful served over white rice, egg noodles, or mashed potatoes to soak up the sauce.
A side of steamed green beans or a simple green salad balances the richness. For a low-carb option, serve it over cauliflower rice or with roasted vegetables.
The dish is also delicious on its own, with a slice of crusty bread for dipping. For a complete meal, add a side of roasted asparagus or a crisp Caesar salad. Leftovers are great for lunch the next day—just reheat gently and enjoy.

Slow Cooker Parmesan Ranch Mushroom Chicken

Ingredients
- 1 1/2 lb boneless, skinless chicken breast cutlets
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Place the chicken breast cutlets in an even layer in the bottom of a 6-7 quart slow cooker. Pour the condensed cream of mushroom soup over the chicken, spreading it to cover as much as possible. Sprinkle the dry ranch seasoning mix evenly over the soup and chicken.
- Place the block of softened cream cheese in the center of the slow cooker. Sprinkle the grated Parmesan over the top, covering the cream cheese and as much of the surface as possible.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check the internal temperature of the thickest part of a chicken cutlet with an instant-read thermometer. It must read at least 165°F (74°C). If it hasn't reached that temperature, continue cooking and check again in 15-20 minutes.
- Once the chicken is cooked through, gently stir the sauce to combine the melted cream cheese and Parmesan into a smooth, creamy gravy. Serve the chicken and sauce over rice, pasta, or mashed potatoes.
