Before you start

Before you start, take the cream cheese out of the refrigerator and let it soften on the counter for about 30 minutes. Grate the Parmesan if you're using a block. Measure out the ranch seasoning and have the can of soup ready.

Place the chicken cutlets in the slow cooker in a single layer—if they overlap, that's fine, but try to spread them out as much as possible. There's no need to brown the chicken first; the slow cooker will do all the work.

Ingredients at a glance (5)
  • 1 1/2 lb boneless, skinless chicken breast cutlets
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 oz dry buttermilk ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese

Instructions

Layer and Season

  1. Layer the Ingredients
Place the chicken breast cutlets in an even layer in the bottom of a 6-7 quart slow cooker. Pour the condensed cream of mushroom soup over the chicken, spreading it to cover as much as possible. Sprinkle the dry ranch seasoning mix evenly over the soup and chicken.
Look for The chicken is covered with soup and seasoning.
Tip No need to stir; the layers will meld as they cook.
  2. Add the Cream Cheese and Parmesan
Place the block of softened cream cheese in the center of the slow cooker. Sprinkle the grated Parmesan over the top, covering the cream cheese and as much of the surface as possible.
Look for The cream cheese sits on top, ready to melt.
Tip Soften the cream cheese beforehand for smoother melting.

At the end of this phase, the slow cooker contains raw chicken with soup, ranch seasoning, cream cheese, and Parmesan layered on top. The ingredients are not mixed; they will meld as they cook.

The cream cheese is still in block form, and the Parmesan is a snowy blanket over everything. This is the 'dump and go' stage.

Slow Cook and Thicken

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours to keep the heat steady.
Look for The sauce will bubble gently around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If you prefer a thicker sauce, leave the lid off for the last 30 minutes.
  2. Check the Temperature
After 4 hours, check the internal temperature of the thickest part of a chicken cutlet with an instant-read thermometer. It must read at least 165°F (74°C). If it hasn't reached that temperature, continue cooking and check again in 15-20 minutes.
Look for The chicken is no longer pink and the juices run clear.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Insert the thermometer sideways into the thickest part for an accurate reading.

After 4-5 hours on LOW, the chicken is cooked through and the sauce is bubbling. The cream cheese has melted into the soup, creating a creamy, light brown gravy. The Parmesan has melted into the sauce, adding a golden tint. The aroma is rich and savory, with hints of garlic and herbs from the ranch seasoning.

Stir and Serve

  1. Stir and Serve
Once the chicken is cooked through, gently stir the sauce to combine the melted cream cheese and Parmesan into a smooth, creamy gravy. Serve the chicken and sauce over rice, pasta, or mashed potatoes.
Look for The sauce is velvety and coats the chicken.
Tip Shred the chicken right in the slow cooker for a more casual meal.

Once stirred, the sauce is smooth and velvety, coating the chicken pieces. The chicken is tender and easily breaks apart with a fork. The sauce has a thick, creamy consistency that clings to rice or noodles. The dish is ready to be served immediately, garnished with fresh herbs if desired (though not in the video).

Common mistakes

One common mistake is lifting the lid too often to check on the pot. Every time the lid is lifted, heat escapes and adds 20-30 minutes to the cooking time. Trust the process and keep the lid on until the minimum time is up.

Another mistake is using cold cream cheese straight from the fridge, which can lead to lumps. Let it soften first. Finally, don't skip the Parmesan—it adds essential savory depth that balances the richness of the cream cheese.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. The sauce should be bubbling gently around the edges and have a smooth, creamy consistency.

If the sauce seems thin, remove the lid and cook on HIGH for an additional 20-30 minutes to reduce and thicken. The chicken should be fork-tender and easily pull apart with a spoon, but not dry.

  • Poultry: 165°F (74°C) in the thickest part
