Tips for success
For the best texture, cut the pork tenderloin into thick medallions — about 2 inches each. This allows the meat to stay moist during the long cook while still becoming tender enough to shred.
If you cut them too thin, they may dry out; too thick, and they might not cook through in the same time. Also, don't skip the rest time after cooking; it lets the juices redistribute and the sauce thicken slightly.
The sauce is the star here, so don't rush it. If it seems too thin at the end, leave the lid off for 15 to 30 minutes to let it reduce. If it's too thick, you can stir in a splash of broth to loosen it.
Taste before serving and adjust with salt and pepper — the Parmesan adds salt, so you may not need much. Serve over rice, mashed potatoes, or even crusty bread to soak up every drop.
Variations
- Chicken Version: Use 2 pounds of boneless, skinless chicken thighs instead of pork. Cook on low for 4 to 5 hours, until the chicken is tender and shreds easily. The sauce works beautifully with chicken.
- Add Mushrooms: Add 8 ounces of sliced cremini mushrooms along with the onions. They'll cook down and add an earthy depth that complements the Parmesan and thyme.
- Spicy Kick: Add a pinch of red pepper flakes or a chopped jalapeño with the onions for a gentle heat that contrasts with the creamy sauce.
- Herb Swap: Replace the thyme with 2 sprigs of fresh rosemary. The flavor will be more piney and aromatic, still lovely with the pork and onions.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to loosen the sauce.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of broth or water to loosen the sauce if needed.
Leftovers keep in an airtight container in the refrigerator for up to 4 days. Let the dish cool completely before storing, and reheat gently in the microwave or on the stovetop, adding a splash of broth if the sauce has thickened too much.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. You may need to add 30 minutes to the cooking time because the ingredients start cold.
Serving ideas
This dish is best served over fluffy white rice or herb rice, which soaks up the creamy sauce beautifully.
Mashed potatoes are another excellent choice, as are egg noodles or crusty bread for dipping. The sauce is rich and savory, so a simple green salad with a bright vinaigrette makes a nice contrast.
For a low-carb option, serve the pork and sauce over cauliflower rice or alongside roasted vegetables.
The dish is hearty enough to stand alone, but a side of steamed green beans or asparagus adds color and freshness. Garnish with a few fresh thyme leaves, if you like, for a pop of color.

Slow-Cooker Parmesan French Onion Pork Medallions

Ingredients
- 2 lb pork tenderloin, cut into 8 medallions
- 3 medium Vidalia onions, thinly sliced
- 6 sprigs fresh thyme
- 1 cup beef broth
- 8 oz cream cheese, softened
- 1 cup freshly grated Parmesan cheese
Instructions
- Place the pork tenderloin medallions in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced Vidalia onions over the top, tucking the fresh thyme sprigs among them. Pour the beef broth around the edges, being careful not to wash the onions off the meat.
- Place the block of softened cream cheese in the center of the slow cooker, right on top of the onions. Sprinkle the grated Parmesan evenly over the entire surface.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the pork is fork-tender and easily pulls apart. Avoid opening the lid during the first 5 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the pork is tender, remove the thyme sprigs and discard them. Use two forks to break the pork into large chunks or shred it gently. Stir everything together so the cream cheese and Parmesan melt into a smooth, velvety sauce coating the meat and onions. Let it rest for 3 minutes before slicing.
- Let the pork rest in the slow cooker, uncovered, for at least 3 minutes before serving. This allows the juices to redistribute and the sauce to settle.
- Spoon the pork and sauce over fluffy herb rice or your favorite grain. The creamy sauce soaks into the rice beautifully.
