This slow-cooker pork tenderloin recipe is the definition of set-it-and-forget-it. Eight thick medallions, a mountain of sweet Vidalia onions, a block of cream cheese, and a shower of Parmesan go into the crockpot, and hours later you come back to tender, pull-apart pork in a velvety, onion-sweet sauce.
It's rich, savory, and surprisingly elegant for so little effort. Serve it over fluffy herb rice and dinner is done.
There are slow-cooker recipes that require browning, searing, and layering flavors in a pan first — and then there are the ones where you simply dump everything in and walk away. This one is firmly in the second camp. Pork tenderloin medallions, sliced onions, fresh thyme, broth, cream cheese, and Parmesan all go into the slow cooker at once.
After six hours on low, the pork is fork-tender, the onions have melted into sweet ribbons, and the cream cheese and Parmesan have turned into a luscious, golden sauce. It's a one-pot wonder that tastes like you fussed, but you didn't.
Ingredients
- 2 lb pork tenderloin, cut into 8 medallions
- 3 medium Vidalia onions, thinly sliced
- 6 sprigs fresh thyme
- 1 cup beef broth
- 8 oz cream cheese, softened
- 1 cup freshly grated Parmesan cheese
Why this recipe works
The magic here is the combination of low, slow heat and the natural moisture of the ingredients. Pork tenderloin is lean, but when cooked gently in liquid, it becomes exceptionally tender — almost like a braise.
The onions release their juices as they cook, blending with the broth to create a savory base. The cream cheese melts into the liquid, thickening it into a silky sauce, while the Parmesan adds a nutty, salty depth that echoes classic French onion soup.
The method is intentionally hands-off. There's no browning, no deglazing, no layering of flavors in a hot pan. Everything goes into the slow cooker in one go, and the long, gentle cooking does the work.
The result is a dish that tastes complex — sweet, savory, creamy, and herbal — but the process is almost laughably simple. That's the beauty of a dump-and-go slow cooker meal: it rewards patience, not effort.
Notes and substitutions
Use a good-quality pork tenderloin and cut it into thick medallions — about 2 inches each. If you can find Vidalia or another sweet onion, use them; they caramelize beautifully and add a mild sweetness that balances the richness of the cheese. Fresh thyme is important here; dried thyme can turn bitter over a long cook. Beef broth gives the deepest flavor, but chicken broth works if that's what you have.
The cream cheese should be softened to room temperature before adding, so it melts more evenly. A block of full-fat cream cheese gives the best texture; low-fat versions can turn grainy. Grate the Parmesan yourself from a wedge — pre-shredded cheese contains anti-caking agents that can prevent it from melting smoothly. The slow cooker should be at least 6 quarts to fit everything comfortably.
- Vidalia onions: Sweet onions like Walla Walla or Maui; yellow onions work too but will be a bit sharper.
- beef broth: Chicken broth or vegetable broth can stand in, though beef gives a deeper, more savory flavor.
- fresh thyme: 1 teaspoon dried thyme, added with the broth, will work if fresh is unavailable.
- pork tenderloin: Boneless pork chops, about 1 inch thick, can be used; reduce cooking time to about 4 hours on low.
