Tips for success

For a deeper flavor, you can sear the veal shanks in a hot pan with a little oil before placing them in the slow cooker. This step adds a caramelized crust to the exterior of the meat, which enhances the complexity of the final sauce. If you choose to sear, ensure you deglaze the pan with a bit of the wine to capture all the flavorful browned bits before pouring everything into the slow cooker.

The gremolata is the signature finish for this dish and should always be added just before serving. The brightness of the lemon zest and the freshness of the parsley are delicate and can lose their impact if added too early.

If you want to prepare the gremolata in advance, keep the ingredients separate and combine them right before plating to ensure the maximum flavor and texture contrast when the dish hits the table.

Variations

  • Herb-Infused Osso Buco: Add a sprig of fresh rosemary and thyme to the slow cooker during the braising phase for an earthy, aromatic depth that complements the veal beautifully.
  • Tomato-Braised Osso Buco: Stir in a half cup of tomato paste or crushed tomatoes with the broth to create a richer, slightly sweeter sauce base that offers a classic Italian flavor profile.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze the meat and sauce in a freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Gently reheat on the stovetop over low heat until warmed through, or use a microwave at medium power, stirring occasionally.

Store any leftover osso buco in an airtight container. Allow the meat and sauce to cool for no more than 2 hours at room temperature before transferring them to the refrigerator.

This ensures food safety and helps maintain the quality of the dish. When stored properly, the meat will remain flavorful for up to three days, often tasting even better the next day as the flavors continue to meld together in the refrigerator.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting. You can prepare the entire recipe and store it in the refrigerator.

When ready to serve, gently reheat the veal and sauce on the stovetop over low heat until warmed through. The gremolata should always be prepared fresh at the last minute to provide that essential bright, zesty contrast to the rich, slow-braised meat.

Serving ideas

Serve the osso buco in shallow bowls to accommodate the generous amount of braising liquid. It pairs exceptionally well with a side of creamy polenta, saffron risotto, or crusty bread, which is perfect for soaking up the savory juices. Ensure that each portion includes a good amount of the cooked vegetables and sauce, and top generously with the fresh gremolata to balance the richness of the veal.

For a complete meal, consider serving the osso buco alongside a crisp green salad with a light vinaigrette. The acidity of the salad dressing complements the deep, savory notes of the braised meat.

Arrange the shanks carefully on the plate to show off the bone and marrow, which is considered a delicacy. A chilled glass of the same white wine used in the cooking process makes for a harmonious beverage pairing.

Frequently asked questions

Can this recipe be made with other cuts of meat?
Yes, while veal shanks are traditional for osso buco, pork shanks or thick-cut beef shanks can be used as effective substitutes. Adjust the cooking time slightly depending on the thickness of the meat to ensure it becomes fork-tender.
Is it necessary to sear the meat first?
Searing is optional but recommended. While the slow cooker will cook the meat perfectly without it, searing adds a depth of flavor through caramelization that makes the final sauce richer and more complex.
How can the sauce be thickened?
If the sauce is too thin after cooking, remove the meat and simmer the liquid in a saucepan over medium-high heat until it reduces to the desired consistency. Alternatively, whisk in a small amount of cornstarch slurry and cook for a few minutes.
