Tips for success

To achieve the best flavor, allow the shredded beef to sit in the reduced cooking juices for at least 10 minutes before serving. This resting period allows the meat to reabsorb any surface moisture, ensuring every bite is succulent and flavorful. If you prefer a more intense flavor, you can let the beef cool completely and reheat it the next day, which allows the spices to penetrate the meat even further.

For a variety in texture, consider lightly toasting your baguettes with a small amount of butter or oil before stuffing them. This creates a barrier that prevents the bread from becoming soggy too quickly when it comes into contact with the savory beef juices.

Be sure to drain any excess liquid from your pickled vegetables before adding them to the sandwich to maintain the crispness of the baguette and the integrity of the overall dish.

Variations

  • Spicy Lemongrass Beef: Add two thinly sliced bird's eye chilies to the slow cooker along with the other seasonings for an extra layer of heat that complements the lemongrass beautifully.
  • Ginger-Infused Shredded Beef: Incorporate two tablespoons of freshly grated ginger when layering the ingredients to add a bright, sharp note that cuts through the richness of the beef.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days. Cool completely within 2 hours before refrigerating.
Freezer
Freeze the shredded beef in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat the beef gently in a saucepan over low heat, adding a splash of water if needed, until warmed through to 165°F (74°C).

Store any leftover beef in an airtight container in the refrigerator for up to 3 days. To maintain the best quality, keep the shredded beef separate from the sandwich components until you are ready to assemble them. If the sauce thickens too much in the fridge, add a small splash of water or broth when reheating to bring back the desired consistency and ensure the beef remains moist and flavorful.

This recipe is excellent for making ahead of time. You can cook the beef, shred it, and store it in its juices up to 2 days before you plan to serve it. The flavors will continue to develop while stored in the refrigerator, often tasting even better the next day.

Simply reheat the beef gently on the stove or in the microwave before preparing your banh mi sandwiches. This makes it an ideal option for easy entertaining.

Serving ideas

Serve the banh mi immediately after assembly to ensure the baguette remains crispy. The contrast between the warm, tender beef and the cold, crunchy pickled vegetables is a hallmark of this sandwich, so serving it fresh is essential for the best experience.

Arrange the sandwiches on a platter and offer additional jalapeño slices or cilantro on the side for those who prefer an extra kick of heat or freshness.

These sandwiches pair well with simple sides such as a light cucumber salad or a bowl of clear broth. Because the beef is quite flavorful, you do not need heavy sides to complement the meal.

Focus on fresh, crisp vegetables to balance the richness of the five-spice beef. If you are serving a crowd, set up a sandwich station with the warm beef and various toppings so guests can assemble their own banh mi to their liking.

Frequently asked questions

Can this beef be made in a pressure cooker instead of a slow cooker?
Yes, a pressure cooker can be used to speed up the process. Cook on high pressure for approximately 45 to 60 minutes, followed by a natural release. Ensure the beef is tender before shredding.
What is the best way to keep the baguettes from getting soggy?
Toasting the bread lightly before filling is the most effective method. You can also add a thin layer of mayonnaise or a spread to the inside of the bread, which acts as a moisture barrier.
Can other cuts of meat be used for this recipe?
While chuck roast is preferred for its fat content, beef brisket or even pork shoulder can be used with similar results. Adjust the cooking time slightly if the cut is significantly leaner or tougher.

Ingredients

  • 3 lb beef chuck eye roast
  • 3 stalks lemongrass, bruised
  • 1 tbsp Chinese five-spice powder
  • 45 ml fish sauce
  • 60 ml soy sauce
  • 50 g palm sugar
  • Vietnamese baguettes, for serving
  • Pickled daikon and carrot ribbons, for serving
  • Jalapeno slices, for serving
  • Fresh cilantro, for serving

Instructions

  1. Place the 3-pound beef chuck eye roast into the ceramic insert of the slow cooker. Add the bruised lemongrass stalks, Chinese five-spice, fish sauce, soy sauce, and palm sugar to the pot. Ensure the beef is positioned so it can cook evenly in the aromatic liquid.
  2. Cover the slow cooker with its lid. Set the device to the LOW setting and cook for 8 hours. The beef must reach an internal temperature of at least 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before shredding to ensure maximum tenderness and juiciness.
  3. Remove the lemongrass stalks from the pot and discard them. Use two forks to shred the beef directly inside the slow cooker, allowing the strands to absorb the remaining five-spice caramel broth. Ensure the meat is thoroughly coated in the juices.
  4. Slice the Vietnamese baguettes lengthwise, leaving one side attached to form a hinge. Stuff the baguettes generously with the shredded lemongrass beef. Top with pickled daikon and carrot ribbons, fresh jalapeño slices, and a handful of cilantro leaves. Serve immediately while the bread is crisp and the beef is warm.
