Tips for success

For the best flavor, make the cowboy butter from scratch: blend softened butter with minced garlic, chopped parsley, a pinch of smoked paprika, and salt. Shape it into a log and chill before slicing into medallions.

This allows the butter to melt slowly and evenly over the pork. If using store-bought, choose one with visible herbs and a strong garlic aroma. The butter can be made up to a week ahead and kept refrigerated.

To deepen the flavor, you can sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker. This adds a caramelized crust that enhances the final dish, but it's optional.

The recipe is designed to be truly 'dump and go,' so feel free to skip the sear. If you do sear, let the meat cool slightly before placing it in the cooker to avoid overheating the stoneware.

Variations

  • Smoky Chipotle Pork: Add 2 chipotle peppers in adobo sauce, minced, to the slow cooker along with the stout. The smoky heat complements the rich pork and adds a spicy kick. Reduce the cowboy butter to 3 oz to balance the heat.
  • Herb and Citrus Pork: Replace the cowboy butter with a mixture of 4 oz softened butter, 2 minced garlic cloves, 1 tbsp chopped rosemary, and the zest of 1 orange. Add the orange juice to the cooker for a bright, aromatic twist.
  • Root Beer Pulled Pork: Swap the Guinness for 12 oz of root beer (or a non-alcoholic stout). The sweetness of the root beer pairs beautifully with the garlic butter and onions, creating a slightly sweeter, kid-friendly version.
  • Spicy Harissa Pork: Stir 2 tbsp harissa paste into the stout before pouring over the pork. The harissa adds a smoky, spicy depth. Finish with a dollop of Greek yogurt or sour cream when serving.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little beef broth or water to restore the sauce's consistency.

Store leftover pork in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if needed to loosen it. Cool the pork within 2 hours of cooking and refrigerate promptly.

The entire dish can be made up to 2 days ahead. Cook as directed, let cool, then refrigerate the pork in its sauce. Reheat gently on the stovetop or in a 350°F (175°C) oven until warmed through.

The flavors meld even more overnight. The cowboy butter can also be made ahead and stored in the refrigerator for up to a week, or frozen for up to 3 months.

Serving ideas

Serve the shredded pork over warm buttered egg noodles, as shown, or with creamy mashed potatoes. The rich, malty gravy is perfect for soaking into starchy sides. Add a side of crusty bread or a simple green salad with a sharp vinaigrette to cut through the richness. For a low-carb option, serve over cauliflower mash or alongside roasted vegetables.

For a heartier meal, pile the pork onto soft buns for sliders, or use it to fill tacos with pickled onions and a squeeze of lime. The leftovers are excellent in quesadillas or stirred into mac and cheese.

Garnish with fresh parsley or chives if desired, but the dish is already full of flavor. This pork also freezes beautifully, so consider doubling the recipe.

Frequently asked questions

Can this recipe be made in a Dutch oven instead of a slow cooker?
Yes. Brown the pork in a Dutch oven over medium-high heat, then add the onions, stout, and butter. Cover and braise in a 300°F (150°C) oven for 4–5 hours, or until the meat is fork-tender. Check occasionally and add a splash of broth if the liquid evaporates too much.
Why does the pork need to rest before shredding?
Resting allows the juices to redistribute throughout the meat, preventing them from running out when shredded. If the meat is cut immediately, it can become dry. A 10-minute rest also makes the meat easier to handle and results in more tender, moist shreds.
Can this recipe be doubled for a larger crowd?
Yes, but ensure the slow cooker is not more than two-thirds full. A 7-quart cooker can handle up to 6 pounds of pork. Increase the cooking time by 1–2 hours if needed, and always check for fork-tenderness. The other ingredients can be scaled proportionally.
What if the sauce is too thin after cooking?
If the sauce is thinner than desired, remove the pork and onions to a plate. Pour the liquid into a saucepan and simmer over medium-high heat for 10–15 minutes to reduce and thicken. Alternatively, whisk in a slurry of 1 tbsp cornstarch and 2 tbsp cold water, then simmer until thickened.
Can this pork be made in an Instant Pot?
Yes. Sear the pork on the sauté setting, then add the onions, stout, and butter. Pressure cook on high for 90 minutes, then allow a natural pressure release for 15 minutes. Shred and serve as directed. The cooking time is significantly shorter than the slow cooker.

Slow-Cooker Guinness Onion Garlic Butter Pork Shoulder

Shredded pork shoulder in a slow cooker with pearl onions and dark stout gravy, topped with melted butter.

Ingredients

  • 4 lb boneless pork shoulder roast (Boston butt)
  • 1 cup peeled white pearl onions
  • 1 bottle (12 oz) Guinness draught stout
  • 4 oz cowboy garlic butter, cut into 4 medallions

Instructions

  1. Place the pork shoulder roast in the center of a 7-quart slow cooker. Scatter the pearl onions around the roast. Pour the Guinness stout over and around the pork, letting it pool in the bottom.
  2. Place the four medallions of cowboy garlic butter evenly across the top of the pork roast. No need to rub or spread; they will melt as the cooker heats.
  3. Cover the slow cooker and cook on LOW for 8 hours, or until the pork is fork-tender and shreds easily. Do not lift the lid during the first 6 hours. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 10 minutes. During this time, the internal temperature will continue to rise and the juices will redistribute.
  5. Using two forks, shred the pork into bite-sized ribbons. Return the shredded meat to the slow cooker and stir it into the cooking liquid, onions, and melted butter. Serve warm, spooned over buttered egg noodles or on its own.
