Tips for success
For the most flavorful gravy, use a high-quality beef chuck roast with good marbling. The fat renders during cooking and enriches the sauce.
If you have time, sear the roast in a hot skillet with a little oil before adding it to the slow cooker—this adds a deep browned flavor, though it is not necessary.
To make the cowboy butter at home, mix 8 tablespoons of softened butter with 2 minced garlic cloves, 1 tablespoon chopped fresh parsley, 1 teaspoon fresh thyme leaves, and a pinch of salt and pepper.
Shape into a log, wrap in plastic wrap, and chill until firm. You can also add a pinch of cayenne or smoked paprika for a subtle kick.
Variations
- Add mushrooms: Add 8 ounces of cremini or button mushrooms, halved, along with the potatoes and carrots. The mushrooms will absorb the beefy gravy and add an earthy flavor. No other changes needed.
- Spicy kick: Mix 1/2 teaspoon of red pepper flakes or a minced chipotle pepper into the cowboy butter before placing it on the roast. This adds a subtle heat that builds with each bite. Adjust the amount to taste.
- Herb swap: Use a compound butter with fresh rosemary and thyme instead of parsley. Rosemary pairs beautifully with beef and adds a woodsy aroma. You can also add a sprig of fresh rosemary to the pot during cooking, but remove it before serving.
- Root vegetable medley: Replace half of the potatoes with parsnips or turnips, cut into similar-sized chunks. The extra root vegetables add a slightly sweet, earthy flavor and hold up well to the long cooking time.
Storage and make-ahead
- Fridge
- Leftover shredded beef and vegetables will keep in the refrigerator for up to 4 days in an airtight container.
- Freezer
- Freeze the cooled beef, vegetables, and gravy in a freezer-safe container for up to 3 months.
- Reheat
- Reheat leftovers in a covered pot over low heat, stirring occasionally, until warmed through. Add a little beef broth or water if the mixture seems dry.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The beef and vegetables will keep well, and the flavors will continue to meld.
Reheat gently in the microwave or on the stovetop with a splash of beef broth to loosen the gravy. The dish also freezes well for up to 3 months.
You can assemble the slow cooker the night before: place the roast, potatoes, carrots, and butter in the insert, cover, and refrigerate. In the morning, simply place the insert in the slow cooker base and cook as directed.
You may need to add 30 minutes to the cooking time if the ingredients are cold. The cooked dish can also be made ahead and reheated gently.
Serving ideas
Serve the shredded beef and vegetables over a bed of buttered egg noodles, with extra gravy spooned on top. The noodles soak up the rich sauce and add a comforting, hearty element. You can also serve the roast over mashed potatoes, rice, or with crusty bread for dipping into the gravy.
For a complete meal, add a simple green salad with a tangy vinaigrette to cut through the richness of the beef. A side of roasted green beans or steamed broccoli also works well. The dish is satisfying on its own, but a little brightness from a fresh side dish balances the buttery, savory flavors.

Slow-Cooker Garlic Butter Chuck Roast with Potatoes and Carrots

Ingredients
- 3 1/2 lb beef chuck roast
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 4 medium heirloom carrots, thick-cut
- 4 medallions garlic-herb compound cowboy butter
- 12 oz buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Arrange the halved baby Yukon Gold potatoes and thick-cut carrots around the roast, tucking them into the sides so they are nestled against the beef.
- Place the four medallions of garlic-herb compound cowboy butter directly on top of the roast, spacing them evenly. They will melt as the slow cooker heats, creating a rich butter sauce.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and shreds easily. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the beef is tender, transfer it to a cutting board. Let it rest for at least 3 minutes, then shred it with two forks, discarding any large pieces of fat. The meat should pull apart easily.
- Return the shredded beef to the slow cooker with the potatoes and carrots. Stir gently to coat everything in the buttery gravy. Let it sit on warm for 10 minutes so the flavors meld.
- Cook the egg noodles according to package directions, drain, and toss with a little butter. Spoon the shredded beef, potatoes, and carrots over the noodles, and ladle extra gravy on top.
