Tips for success

For the best flavor, use a high-quality garlic-herb compound butter. If you’re making your own, let the butter come to room temperature so it’s easy to mix in the garlic and herbs.

You can also add a splash of beef broth to the pot if you prefer a thinner gravy, but the butter and meat juices are usually enough.

Don’t be tempted to cook on high for a shorter time. Low and slow is the key to tender brisket. The collagen needs time to break down, and high heat can make the meat tough. If you’re short on time, you can cook on high for 5-6 hours, but the texture won’t be quite as silky.

Variations

  • Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the shallots and carrots. They’ll absorb the butter and beef juices, becoming rich and savory. No other changes needed.
  • Use Chuck Roast: Substitute the brisket with a 3 1/2-lb chuck roast. It has similar marbling and will shred just as beautifully. Cook time remains the same.
  • Add Red Wine: Deglaze the slow cooker with 1/2 cup dry red wine before adding the brisket. The wine adds depth and complexity to the gravy. Omit if you prefer a non-alcoholic version.
  • Make It Spicy: Add 1 teaspoon red pepper flakes or a diced jalapeño along with the vegetables for a gentle heat. The spice balances the richness of the butter.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. The gravy will thicken when cold; reheat gently with a splash of broth or water.
Freezer
Freeze the shredded brisket and vegetables in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water to restore the gravy’s consistency.

Store any leftover brisket and vegetables in an airtight container in the refrigerator for up to 4 days. The gravy will solidify when chilled, but it will melt again when reheated.

To reheat, place in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a splash of beef broth or water if needed to loosen the gravy.

This dish is perfect for making ahead. Cook the brisket up to 2 days in advance, then refrigerate it in the slow cooker insert (once cooled) or in a separate container.

Reheat gently on the stovetop or in the slow cooker on low before serving. The flavors actually deepen overnight, making it even better the next day.

Serving ideas

Serve the brisket over a generous bed of buttered egg noodles, spooning the shallots and carrots on top. Ladle extra gravy over each portion so it soaks into the noodles. A simple green salad with a tangy vinaigrette is a nice contrast to the richness of the beef.

For a low-carb option, serve the brisket over mashed cauliflower or alongside roasted vegetables instead of noodles.

The gravy is also delicious spooned over creamy polenta or mashed potatoes. Leftovers make excellent sandwiches — pile the beef on crusty bread with a little of the gravy.

Frequently asked questions

Can this brisket be made in an Instant Pot?
Yes, but the texture will be different. Use the pressure cooker on high for 60-75 minutes, then let the pressure release naturally for 15 minutes. The meat will be tender but not as falling-apart as slow-cooked brisket. You may need to reduce the gravy on the sauté setting afterward.
What if the gravy is too thin?
If the gravy is too thin after cooking, remove the meat and vegetables with a slotted spoon, then set the slow cooker to high and let the liquid simmer uncovered for 15-20 minutes to reduce. Alternatively, whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, then cook for 5 minutes until thickened.
Can this recipe be doubled?
Yes, if your slow cooker is large enough (at least 8 quarts). Keep the ingredients in the same proportions, but ensure the brisket fits in a single layer. Cooking time may need to increase by 1-2 hours, so check for fork-tenderness before serving.
How do you know when the brisket is done?
The brisket is done when it is fork-tender: a fork inserted into the thickest part should twist easily, and the meat should shred with almost no resistance. The internal temperature should be at least 145°F (63°C) for safety, but for best texture, cook until it shreds easily.
Can you use frozen brisket?
It’s best to thaw the brisket in the refrigerator overnight before cooking. Cooking from frozen will increase the cook time significantly and may result in uneven cooking. If you must cook from frozen, add 2-3 hours to the cooking time and check for doneness.

Slow Cooker Garlic Butter Brisket with Shallots and Carrots

Prep 10 minCook 8 hTotal 8 h 10 minServes 6
Fork-tender beef brisket with shallots and carrots in a slow cooker, topped with melted garlic butter

Ingredients

  • 3 1/2 lb beef brisket, trimmed
  • 8 whole shallots, peeled
  • 1 lb baby carrots
  • 4 tbsp garlic-herb compound butter, cut into medallions
  • 12 oz buttered egg noodles, for serving

Instructions

  1. Place the trimmed beef brisket flat in the bottom of the slow cooker. Scatter the peeled whole shallots and baby carrots all around the roast, tucking them into any gaps so they sit snugly against the meat.
  2. Place the medallions of garlic-herb compound butter evenly across the top of the brisket. They will melt as the slow cooker heats, basting the meat and vegetables in rich, herby flavor.
  3. Cover the slow cooker and cook on low for 8 to 10 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for best texture cook until it shreds easily. Let it rest for 3 minutes before slicing.
  4. Once the brisket is fork-tender, transfer it to a cutting board and let it rest for at least 3 minutes. Then use two forks to shred the meat into bite-sized pieces, discarding any large fat pieces.
  5. Return the shredded beef to the slow cooker with the shallots and carrots. Stir gently to coat everything in the buttery gravy. Taste and adjust seasoning if needed.
  6. Spoon the brisket and vegetables over warm buttered egg noodles. Use a slotted spoon to serve, letting the rich gravy soak into the noodles.
