Before you start

Before you start, make sure your slow cooker is clean and ready. If your brisket has a thick fat cap, trim it to about 1/4 inch. Peel the shallots and measure the baby carrots.

If using store-bought compound butter, let it soften slightly so it’s easy to slice into medallions. Have all your ingredients within reach — this recipe comes together in minutes, and the slow cooker does the rest.

Ingredients at a glance (5)
  • 3 1/2 lb beef brisket, trimmed
  • 8 whole shallots, peeled
  • 1 lb baby carrots
  • 4 tbsp garlic-herb compound butter, cut into medallions
  • 12 oz buttered egg noodles, for serving

Instructions

Layer and Top

  1. Layer the Brisket and Vegetables
Place the trimmed beef brisket flat in the bottom of the slow cooker. Scatter the peeled whole shallots and baby carrots all around the roast, tucking them into any gaps so they sit snugly against the meat.
Look for The brisket should sit in a single layer with the vegetables nestled around it.
Tip No need to sear the brisket first — the slow cooker does all the work.
  2. Top with Garlic-Herb Butter
Place the medallions of garlic-herb compound butter evenly across the top of the brisket. They will melt as the slow cooker heats, basting the meat and vegetables in rich, herby flavor.
Look for The butter sits on top of the meat in thick pats, ready to melt.
Tip If the butter is very cold, let it sit at room temperature for 10 minutes before slicing.

At the end of this phase, the brisket sits flat in the slow cooker with shallots and carrots tucked around it. The butter medallions are placed on top.

Everything looks neat and ready to cook. The raw meat should be cool to the touch, and the vegetables should be dry. You’re ready to cover and cook.

Cook and Shred

  1. Cover and Cook Low and Slow
Cover the slow cooker and cook on low for 8 to 10 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for best texture cook until it shreds easily. Let it rest for 3 minutes before slicing.
Look for The meat will be deeply browned and the vegetables soft and caramelized.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid lifting the lid during cooking — each time lets heat escape and adds time.
  2. Shred the Brisket
Once the brisket is fork-tender, transfer it to a cutting board and let it rest for at least 3 minutes. Then use two forks to shred the meat into bite-sized pieces, discarding any large fat pieces.
Look for The meat pulls apart easily with little resistance.
Tip Resting the meat before shredding helps keep it juicy.

After 8 to 10 hours on low, the kitchen smells richly of garlic and herbs. The brisket is deeply browned and fork-tender, and the vegetables are soft and glazed. The butter has melted into a savory gravy. The meat should shred easily, and the internal temperature should be at least 145°F (63°C).

Finish and Serve

  1. Return Meat to the Pot
Return the shredded beef to the slow cooker with the shallots and carrots. Stir gently to coat everything in the buttery gravy. Taste and adjust seasoning if needed.
Look for The meat soaks up the gravy, and the vegetables are glossy.
Tip If the gravy seems thin, leave the lid off for 15 minutes on high to reduce.
  2. Serve Over Buttered Noodles
Spoon the brisket and vegetables over warm buttered egg noodles. Use a slotted spoon to serve, letting the rich gravy soak into the noodles.
Look for Steaming piles of beef and vegetables sit atop the noodles, with gravy pooling at the edges.
Tip For extra richness, spoon a little extra gravy over each serving.

The shredded beef is back in the pot, coated in the buttery gravy. The shallots and carrots are tender and caramelized. When served over buttered noodles, the dish is steamy and glossy, with gravy pooling at the edges. A spoonful should be rich, savory, and satisfying.

Common mistakes

One common mistake is lifting the lid too often to check on the meat. Every time you open the slow cooker, heat escapes and adds 20-30 minutes to the cooking time. Trust the process and keep the lid on.

Another mistake is using a brisket that’s too large for your slow cooker — it won’t cook evenly. Stick to a size that fits with room to spare. Finally, don’t skip the resting step: letting the meat rest before shredding keeps it juicy.

How to tell it’s done

The brisket is done when it is fork-tender: a fork inserted into the thickest part should twist easily and the meat should shred with almost no resistance.

For food safety, the internal temperature must reach at least 145°F (63°C), but for the best texture, cook until it easily shreds, which usually takes 8 to 10 hours on low. The vegetables should be soft and caramelized, and the butter should have melted into a rich gravy.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
