Tips for success
For the best flavor, use a high-quality whole-grain Dijon mustard—the kind with visible mustard seeds. It adds a pleasant pop of texture and a more complex mustard flavor. If you prefer a milder taste, reduce the mustard to 3 tablespoons.
The au jus can be replaced with beef broth, but look for a low-sodium version so you can control the salt. Taste the sauce before serving and adjust with salt and pepper if needed.
When shredding the pork, use two forks and pull in opposite directions for the fluffiest texture. If you have time, let the shredded pork sit in the sauce for 10-15 minutes before serving to soak up more flavor.
The sauce will thicken slightly as it stands. For a thicker gravy, you can mix a tablespoon of cornstarch with cold water and stir it into the slow cooker during the last 30 minutes of cooking.
Variations
- Herb-Infused: Add 2 sprigs of fresh rosemary and 3 sprigs of thyme to the slow cooker before cooking. Remove the herb stems before shredding. The herbs add a fragrant, earthy note that complements the mushrooms.
- Spicy Kick: Stir 1-2 teaspoons of hot sauce or a pinch of cayenne pepper into the sour cream mixture. The heat cuts through the richness and adds a pleasant warmth without overwhelming the dish.
- Smoky Twist: Replace the au jus with smoked beef broth and add 1 teaspoon of smoked paprika to the sauce. This gives the pork a subtle barbecue-like depth that pairs well with the mustard.
- Dairy-Free: Use full-fat coconut cream instead of sour cream and skip the butter if you're using it. The coconut cream provides a similar richness, though the flavor will be slightly different. The sauce may be a bit thinner.

This dish is perfect for making ahead. Prepare the recipe up to 2 days in advance, then store the cooked pork and sauce in the refrigerator. Reheat gently before serving. The pork can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the creamy pork over steamed white rice, which soaks up the luscious sauce perfectly. For a more substantial meal, add a side of roasted green beans or a crisp green salad. The richness of the pork pairs well with a bright, acidic side like pickled red onions or a squeeze of lemon.
For a low-carb option, serve over cauliflower rice or alongside sautéed spinach.
The dish also works wonderfully as a filling for tacos or sandwiches—just pile the pork onto warm tortillas or crusty rolls and top with a bit of fresh cilantro. Leftovers can be repurposed into a hearty hash or pasta sauce.

Slow-Cooker Dijon Cream Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast (Boston butt)
- 8 oz portobello mushrooms, thickly sliced
- 2 tbsp minced garlic
- 1 cup sour cream
- 1/4 cup coarse whole-grain Dijon mustard
- 1 cup beef au jus
Instructions
- Place the pork shoulder in the center of a 6-quart slow cooker. Arrange the thickly sliced portobello mushrooms over and around the pork. Sprinkle the minced garlic evenly over the top.
- In a small bowl, stir together the sour cream, whole-grain Dijon mustard, and beef au jus until smooth. Pour the mixture over the pork and mushrooms, making sure some of the sauce drips down the sides.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature of the pork should reach at least 145°F (63°C) before resting, but for pulled pork, cook until it reaches 200°F (93°C) for optimal shredding.
- Remove the pork to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the meat into bite-sized ribbons, discarding any large pieces of fat. Return the shredded pork to the slow cooker and stir it into the sauce.
- Spoon the creamy pork and mushroom mixture over steamed white rice. Use a slotted spoon to serve, then drizzle with extra sauce from the slow cooker.
