Tips for success
For the most tender brisket, always cook on low if you have the time. The longer, gentler heat breaks down connective tissue more effectively than high heat.
If you're short on time, high heat works in a pinch, but the texture won't be quite as silky. Also, consider searing the brisket in a hot skillet before adding it to the slow cooker—it adds depth, but the recipe works without it.
When shredding the beef, do it right in the cooking liquid so the meat absorbs more flavor. Use two forks to pull the meat apart into thick, juicy strands.
If the sauce seems too thin at the end, you can remove the meat and vegetables and simmer the sauce on the stovetop to reduce it, or stir in a slurry of cornstarch and water. Taste before adding salt—the au jus is often salty enough.
Variations
- Red Wine Twist: Replace half the au jus with a dry red wine like Cabernet Sauvignon. The wine adds depth and a fruity note that pairs beautifully with the Dijon. Cook as directed; the alcohol will cook off during the long simmer.
- Herb-Infused: Add a few sprigs of fresh thyme and rosemary to the pot along with the vegetables. The herbs infuse the sauce with an earthy aroma. Remove the stems before shredding. This works well with the mustard and sour cream.
- Spicy Kick: Stir a teaspoon of hot sauce or a pinch of cayenne pepper into the sour cream before dolloping it on the brisket. The heat balances the richness of the cream and adds a subtle warmth without overpowering the dish.
- Mushroom Medley: Add a cup of sliced cremini mushrooms along with the shallots and carrots. The mushrooms release their liquid and add an earthy, savory note. They'll absorb some of the sauce and become tender and flavorful.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer

- Reheat
- Reheat gently on the stovetop over low heat, stirring occasionally, or in the microwave in 30-second bursts.
Store leftover brisket in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much. Let leftovers cool no more than 2 hours before refrigerating.
This dish is perfect for making ahead. Cook the brisket fully, let it cool, and store it in the refrigerator for up to 3 days. Reheat gently before serving.
You can also freeze the cooked brisket in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat slowly. The sauce may separate slightly upon reheating; stir well to bring it back together.
Serving ideas
Serve the brisket over steamed white rice to soak up the creamy sauce, or with crusty bread for dipping. Mashed potatoes or egg noodles are also excellent choices.
A simple side of roasted green beans or a crisp green salad adds freshness and cuts through the richness. For a low-carb option, serve over cauliflower rice or alongside sautéed spinach.
Garnish with a sprinkle of fresh chopped parsley or chives for a pop of color, if you like. The dish is quite rich, so pair it with a light, crisp white wine like Sauvignon Blanc or a dry Riesling. For a heartier meal, add a side of crusty bread to mop up every last bit of the delicious sauce.

Slow Cooker Dijon Cream Beef Brisket with Shallots and Carrots

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 8 whole shallots, peeled
- 12 baby carrots
- 1/2 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup beef au jus
- steamed white rice, for serving
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Scatter the whole shallots and baby carrots around and on top of the brisket, spreading them evenly so they surround the meat.
- Dollop the sour cream and whole-grain Dijon mustard over the top of the brisket and vegetables. Use a spoon to spread them slightly, but do not stir.
- Pour the beef au jus along the side of the slow cooker, being careful not to wash off the sour cream and mustard from the top of the brisket. The liquid should come about halfway up the meat.
- Cover the slow cooker with the lid. Cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for best texture cook until fork-tender. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the brisket rest in the liquid for at least 3 minutes before shredding. This allows the juices to redistribute.
- Using two forks, shred the brisket directly in the slow cooker, mixing it with the softened shallots and carrots. Stir gently to coat everything with the creamy Dijon sauce.
- Spoon steamed white rice onto a serving plate. Top with the shredded brisket and vegetables, and ladle extra sauce over the top.
- Serve the brisket hot, with additional sauce on the side if desired. The dish is rich and creamy, so a simple green salad or steamed greens make a good accompaniment.
