Tips for success
To prevent the casserole from becoming watery, make sure to drain the canned kidney beans thoroughly before adding them to the beef mixture. Additionally, avoid lifting the lid of the slow cooker during the first few hours of cooking.
Every time the lid is opened, significant heat escapes, which can add up to twenty minutes to the total cooking time and disrupt the even cooking of the potatoes.
If the sauce appears too thin near the end of the cooking time, prop the slow cooker lid open slightly with a wooden spoon during the last thirty minutes of cooking.
This allows excess steam to escape, helping the rich chili sauce thicken up beautifully around the potatoes and beef before you add the final layer of cheddar cheese.
Variations
- Spicy Cowboy Casserole: Add diced jalapeños to the beef mixture and use pepper jack cheese instead of cheddar for a spicy kick.
- Bacon Cowboy Casserole: Stir crumbled cooked bacon into the beef and bean mixture before layering to add a smoky, savory depth.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months; thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1 to 2 minutes, or in a 350°F (175°C) oven until heated through to 165°F (74°C).
Store any leftover casserole in an airtight container in the refrigerator within two hours of cooking to ensure food safety. Properly stored, the leftovers will remain fresh and flavorful for up to three to four days.
This casserole can be prepped a day in advance by browning the beef, mixing in the beans and sauce, and storing the mixture in the refrigerator.
Slice the potatoes just before assembling the casserole to prevent them from oxidizing and turning brown. Assemble and cook according to the recipe instructions when ready.
Serving ideas
Serve this hearty cowboy casserole hot, straight from the slow cooker, using a large serving spoon to capture all the layers of tender potatoes, beef, and melted cheese.
It is a complete, satisfying meal on its own, but it pairs beautifully with a simple green side salad dressed with a light vinaigrette to cut through the richness of the cheese and beef.
For an extra touch of flavor and texture, top individual servings with fresh garnishes such as sliced green onions, chopped cilantro, or a dollop of sour cream. A side of warm cornbread or crusty dinner rolls is also excellent for soaking up any of the delicious, savory chili sauce left on the plate.

Slow Cooker Cowboy Casserole with Melty Cheddar

Ingredients
- 1 1/2 lbs ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) chili sauce
- 4 medium Russet potatoes, peeled and sliced into 1/4-inch rounds
- 2 cups shredded cheddar cheese
Instructions
- In a large skillet over medium-high heat, cook the ground beef until it is completely browned and no longer pink. Drain any excess grease from the skillet to keep the casserole from becoming oily.
- Add the drained kidney beans and the chili sauce directly into the skillet with the browned beef. Stir everything together until the beans and beef are thoroughly coated in the sauce, then remove the skillet from the heat.
- Grease the slow cooker insert. Arrange half of the sliced Russet potatoes in an even layer at the bottom. Spread half of the beef and bean mixture over the potatoes. Repeat with the remaining potatoes and the remaining beef mixture.
- Cover the slow cooker with the lid and cook on low for 7 to 8 hours, or on high for 4 hours, until the potatoes are completely tender when pierced with a fork. Ensure the ground beef mixture reaches a safe internal temperature of 160°F (71°C).
- Sprinkle the shredded cheddar cheese evenly over the top of the hot casserole. Cover the slow cooker with the lid again and cook for an additional 15 minutes, or until the cheese is completely melted, bubbling, and stretchy.
