Tips for success
For the best flavor, use high-quality unsalted butter and a good chili lime seasoning. If the seasoning is salt-free, add a pinch of salt to the butter mixture.
The sauce should be well-seasoned because it flavors everything. You can also add a splash of hot sauce for extra heat, but keep it subtle so the seafood shines.
When serving, use a slotted spoon to lift the seafood and potatoes from the slow cooker, leaving the excess sauce behind. This prevents the dish from becoming too soupy.
Drizzle a little extra sauce over the top for a glossy finish. The remaining sauce can be served on the side for dipping bread or spooning over rice.
Variations
- Spicy Creole Boil: Add 2 tablespoons of Creole seasoning and 1 teaspoon of cayenne to the butter mixture. Substitute the Andouille with spicy smoked sausage and add a chopped bell pepper for extra texture.
- Garlic Herb Butter: Replace the chili lime seasoning with 4 minced garlic cloves, 1 tablespoon of fresh thyme, and 1 teaspoon of smoked paprika. Finish with extra chopped parsley for a fragrant, savory twist.
- Citrus Seafood Boil: Use orange zest instead of lime and add 1/4 cup of orange juice to the butter. Add fennel seeds and serve with orange wedges for a brighter, sweeter flavor profile.
- Low-Country Style: Add corn on the cob cut into 2-inch pieces and smoked kielbasa instead of Andouille. Use a traditional seafood boil seasoning blend and serve with melted butter for dipping.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid toughening the seafood.
- Freezer
- Freeze leftovers for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a covered skillet over low heat, stirring occasionally, until warmed through. Add a splash of water or broth if the sauce has thickened too much.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood will continue to absorb flavor, but the texture may soften. Reheat gently in a skillet or microwave until just warmed through. The sauce may solidify when chilled; reheat it slowly to bring it back to a liquid state.
The ingredients can be prepped a day ahead: split the lobster tails, peel the shrimp, slice the sausage, and halve the potatoes. Store them separately in the refrigerator.
When ready to cook, layer everything in the slow cooker and pour over the butter mixture. The cooking time remains the same, and the dish is just as delicious.
Serving ideas
Serve this seafood boil over steamed jasmine rice to soak up the chili-lime butter sauce. The rice provides a neutral base that lets the bold flavors shine. Add lemon wedges on the side for a bright squeeze of acidity that cuts through the richness. A simple green salad or crusty bread completes the meal.
For a more festive presentation, serve the seafood boil directly from the slow cooker set on the table, letting guests help themselves. Provide extra napkins and a bowl for shells.
The dish is casual and fun, perfect for a weekend gathering. The sauce is meant to be enjoyed generously, so do not be shy with the ladle.

Slow Cooker Chili Lime Butter Seafood Boil

Ingredients
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 12 oz smoked Andouille sausage, sliced into coins
- 1 1/2 lb baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 2 tbsp chili lime seasoning
- 1/4 cup fresh cilantro, chopped
Instructions
- Place the split lobster tails and shrimp into the slow cooker in an even layer. Scatter the Andouille sausage coins and halved baby potatoes over the seafood. The order does not need to be perfect—just spread everything out so the heat reaches each piece evenly.
- In a small saucepan, melt the butter over low heat. Stir in the chili lime seasoning until fully combined. Pour the warm butter mixture evenly over the ingredients in the slow cooker. Sprinkle the chopped cilantro over the top.
- Cover the slow cooker and set it to low. Cook for 3 1/2 to 4 hours, until the lobster tails are opaque and tender, the shrimp are pink and curled, and the potatoes are fork-tender. The sauce will be bubbling gently around the edges.
- Insert an instant-read thermometer into the thickest part of a lobster tail. It should register at least 145°F (63°C). The shrimp should be pink and firm to the touch, and the potatoes should yield easily when pierced with a fork.
- Spoon steamed jasmine rice onto serving plates. Use a slotted spoon to lift the seafood, sausage, and potatoes from the slow cooker and arrange them over the rice. Drizzle with extra chili lime butter sauce from the pot. Serve with lemon wedges on the side.
