Tips for success

For the best flavor, sear the brisket in a hot skillet before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.

If you have time, do this step — it takes just a few minutes and makes a noticeable difference. You can also deglaze the skillet with a little broth and add that to the slow cooker for extra flavor.

To thicken the gravy at the end, remove the meat and vegetables, then whisk a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) into the hot liquid.

Cook on high for 15 minutes until thickened. Or, if you prefer a thinner gravy, simply serve as is. The natural juices from the brisket will also thicken the gravy as it rests.

Variations

  • Red Wine Gravy: Replace 1 cup of the brown gravy with 1 cup of dry red wine, such as Cabernet Sauvignon. The wine adds depth and pairs beautifully with the beef. Simmer the wine for a few minutes before adding to the slow cooker to cook off the alcohol.
  • Herbed Butter: Mix the butter with 1 teaspoon of chopped fresh thyme or rosemary before dotting over the roast. The herbs infuse the gravy with a subtle woodsy flavor. If using dried herbs, use 1/2 teaspoon.
  • Spicy Kick: Add 1-2 teaspoons of hot sauce or a pinch of red pepper flakes to the gravy before pouring over the meat. The heat balances the sweetness of the shallots and carrots. Adjust to taste.
  • Mushroom Medley: Add 8 ounces of sliced cremini mushrooms along with the shallots and carrots. The mushrooms release their liquid and add an earthy flavor to the gravy. No need to sauté them first; they will cook in the slow cooker.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. The gravy will thicken when cold; reheat with a splash of broth or water.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over low heat, or in a 350°F (175°C) oven, until hot and bubbly. Add a little broth if needed.

Store leftover brisket, shallots, and carrots in an airtight container in the refrigerator for up to 4 days. The gravy will solidify when cold; that's fine. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the sauce. The flavors will continue to meld, making leftovers even more delicious.

This dish is ideal for making ahead. Cook the brisket as directed, then let it cool completely. Store in the refrigerator for up to 3 days, or freeze for up to 3 months. To serve, reheat gently on the stovetop or in a 350°F (175°C) oven until hot. The meat will be just as tender and flavorful as the day it was made.

Serving ideas

Serve the brisket over creamy mashed potatoes, buttered egg noodles, or polenta to soak up the rich gravy. The shallots and carrots are a built-in side dish, so you only need a simple green salad or crusty bread to complete the meal.

For a casual presentation, pile the shredded beef onto toasted slider buns and top with a spoonful of the caramelized vegetables.

Leftovers are wonderful the next day — use them for sandwiches, tacos, or a hearty hash. The brisket also freezes well, so you can portion it out for quick weeknight meals.

If you're feeding a crowd, double the recipe and use a larger slow cooker, or cook two briskets in separate cookers. This is the kind of dish that only gets better with time.

Frequently asked questions

Can this recipe be made with a different cut of beef?
Yes, chuck roast or bottom round roast work well as substitutes. These cuts also benefit from long, slow cooking and become tender and flavorful. Adjust the cooking time as needed — thicker cuts may require an extra hour or two. The key is to cook until the meat is fork-tender, not just to a specific time.
How can the gravy be thickened?
If the gravy is thinner than desired, remove the meat and vegetables, then whisk a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water into the hot liquid. Cook on high for 15 minutes until thickened. Alternatively, mash a few of the cooked carrots and stir them into the gravy for a natural thickener.
Can this be cooked on high instead of low?
Yes, but the results will be slightly less tender. Cook on high for 4 to 5 hours instead of 8 to 10 on low. The meat may not shred as easily, but it will still be delicious. For the most tender brisket, low and slow is the recommended method.
What if there is too much liquid?
If there is more liquid than desired, remove the meat and vegetables and simmer the gravy on the stovetop for 10-15 minutes to reduce and concentrate the flavor. You can also thicken it with a cornstarch slurry. The gravy should be glossy and coat the back of a spoon.
Can this recipe be doubled?
Yes, but make sure your slow cooker is large enough (6 quarts or bigger). Increase the ingredients proportionally, but keep the cooking time the same. The meat should still be in a single layer if possible. If the cooker is too full, the meat may not cook evenly.

Slow-cooker beef brisket with shallots and carrots in rich gravy, served on a plate

Ingredients

  • 3 1/2 lb beef brisket, trimmed
  • 8 whole shallots, peeled
  • 1 lb baby carrots
  • 2 cups rich brown gravy
  • 4 tbsp unsalted butter, cut into pats

Instructions

  1. Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Scatter the peeled whole shallots and baby carrots around the roast, nestling them into the corners so they are partially submerged as the meat cooks.
  2. Pour the rich brown gravy evenly over the beef and vegetables. Dot the top of the roast with the pats of unsalted butter, distributing them so they melt across the surface during cooking.
  3. Cover the slow cooker and set it to low. Cook for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
  4. When the brisket is fork-tender, turn off the slow cooker. Using tongs, transfer the roast to a cutting board and let it rest for at least 10 minutes. The internal temperature should register at least 145°F (63°C).
  5. Using two forks, shred the rested brisket into bite-size pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker with the shallots and carrots, and stir gently to coat with the gravy.
  6. Spoon the shredded brisket, shallots, and carrots onto a serving platter or individual plates. Drizzle with extra gravy from the slow cooker. Serve hot, optionally with toasted brioche slider buns.
