Tips for success

To achieve the most authentic flavor, consider skimming some of the excess fat from the top of the consommé before serving if you prefer a lighter dipping sauce. However, keep in mind that this fat is what provides the rich flavor and helps the tortillas crisp up perfectly in the skillet. If you are serving a large crowd, keep the shredded beef warm in the slow cooker on the 'keep warm' setting while you assemble the tacos in batches.

If you find the consommé is too salty, you can balance the flavor by adding a small splash of vinegar or a squeeze of lime juice just before serving. This acidity helps cut through the richness of the beef and cheese, brightening the overall profile of the dish.

Always taste the broth before adjusting, and keep in mind that the saltiness can concentrate as the liquid reduces during the long cooking time, so start with less salt if using a store-bought broth.

Variations

  • Spicy Birria: Add two extra dried arbol chiles to the blender for a significant increase in heat. This variation is perfect for those who enjoy a spicy kick in their tacos.
  • Birria Ramen: Use the leftover consommé as a rich broth base for ramen noodles. Top with the shredded beef, a soft-boiled egg, and green onions for a unique and savory fusion meal.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container for up to 3 days.
Freezer
Freeze the shredded beef in a freezer-safe bag for up to 3 months.
Reheat
Reheat the beef gently in a skillet or microwave until it is steaming hot throughout.

Store any leftover shredded beef in an airtight container in the refrigerator. It will stay fresh for up to three days. Keep the consommé in a separate container, as storing the meat in the liquid for too long can cause it to become overly soft or lose its texture. If you have extra cheese or garnishes, keep them sealed in their own containers to maintain freshness until you are ready to assemble your next batch of tacos.

You can prepare the entire beef mixture up to two days in advance. In fact, many cooks find that the flavors deepen and improve after sitting in the refrigerator overnight. Simply prepare the beef as directed, let it cool completely, and store it in the fridge.

When you are ready to serve, reheat the beef and the consommé gently on the stovetop or in the slow cooker until hot. Then, proceed with the assembly and crisping steps as described in the final phase.

Serving ideas

Serve the quesabirria tacos immediately while they are still hot and crispy from the skillet. Arrange them on a platter with the small bowls of consommé placed alongside for dipping.

Provide plenty of fresh lime wedges, extra cilantro, and minced onion so guests can customize their tacos to their liking. A side of fresh avocado or a dollop of crema helps balance the bold, savory flavors of the beef and adds a creamy texture that pairs perfectly with the crunch of the tortilla.

For a fun and casual presentation, serve the birria as part of a taco bar. Place the hot, shredded beef in a serving bowl, and set out the warmed tortillas, melted cheese, and a variety of toppings in separate dishes.

This allows everyone to build their own tacos or pizzabirria at their own pace. Ensure there are enough napkins available, as this dish is known for being delightfully messy and flavorful, making it the perfect centerpiece for a relaxed weekend gathering with friends and family.

Frequently asked questions

Can this recipe be made with other types of meat?
While beef chuck and short ribs are traditional and provide the best fat-to-meat ratio for tenderness, you can experiment with other cuts like brisket or even a combination of lamb and beef. Avoid using extremely lean cuts, as they will not yield the same succulent texture required for authentic birria.
How can the consommé be kept from becoming too greasy?
It is normal for a layer of fat to form on top of the consommé, as this is the rendered fat from the beef. If you prefer a less greasy sauce, you can chill the consommé in the refrigerator, which will cause the fat to solidify on the surface. You can then easily spoon off the hardened fat before reheating the broth for serving.
Is it necessary to toast the tortillas in the chili oil?
Toasting the tortillas in the chili oil is a critical step for achieving the signature red color, crispy texture, and deep flavor of authentic quesabirria. Skipping this step will result in a standard taco rather than the distinct, flavorful experience that defines this dish. The oil acts as a frying medium that crisps the exterior while infusing the tortilla with the savory essence of the beef.

Ingredients

  • 3 lb beef chuck and boneless short ribs
  • 4 rehydrated guajillo and ancho chiles
  • 2 tomatoes
  • 3 cloves garlic
  • 1 tsp ginger
  • 1 tsp cumin
  • 2 cups beef broth
  • 3 cups Oaxaca cheese
  • 16 tortillas
  • avocado, crema, onion, cilantro, lime for serving

Instructions

  1. Place the rehydrated guajillo and ancho chiles, tomatoes, garlic, ginger, cumin, and beef broth into a blender. Blend on high speed until the mixture is completely smooth and uniform in texture. This sauce forms the flavorful braising liquid that will tenderize the beef over the long cooking period.
  2. Place the beef chuck and boneless short ribs into the slow cooker basin. Pour the blended chili sauce over the meat, ensuring every piece is well-coated. Cover with the lid and cook on the low setting for exactly eight hours. The meat must reach an internal temperature of at least 145°F (63°C). Once cooked, remove the meat and let it rest for at least 3 minutes before shredding.
  3. Shred the cooked beef directly in the slow cooker, allowing it to absorb the rendered chili oil. Heat a skillet over medium heat. Dip a tortilla into the consommé from the slow cooker, place it in the skillet, add a generous amount of Oaxaca cheese and shredded beef, then fold and crisp until golden. Serve hot with additional consommé for dipping and fresh garnishes.
