Tips for success
For the best texture, serve the crisp warm, not hot. Letting it rest for 5 minutes allows the juices to thicken slightly, so the filling doesn’t run all over the plate.
If you prefer a more intense caramel flavor, warm the salted caramel sauce gently before drizzling – it will meld with the ice cream beautifully. You can also add a pinch of flaky sea salt on top just before serving to enhance the sweet-salty contrast.
This recipe is endlessly adaptable. Swap the apples for pears or a mix of stone fruits in summer. Add a handful of chopped pecans or walnuts to the streusel for extra crunch – just toast them first for deeper flavor.
If you like a stronger spice, add a pinch of nutmeg or allspice to the apple mixture. For a touch of sophistication, splash a tablespoon of bourbon or rum into the apples before baking, though that’s optional.
Variations
- Pear and Ginger Crisp: Replace the apples with ripe but firm pears, and add 1 teaspoon of grated fresh ginger to the filling. Omit the cinnamon or reduce it to 1/2 teaspoon. The ginger adds a spicy warmth that pairs beautifully with pears.
- Nutty Oat Streusel: Add 1/2 cup of chopped pecans or walnuts to the streusel mixture. Toast the nuts in a dry skillet for a few minutes before adding to the dry ingredients to deepen their flavor. This adds a lovely crunch and richness.
- Berry Apple Crisp: Toss 1 cup of fresh or frozen blueberries or raspberries with the apples. If using frozen berries, do not thaw them first. Reduce the brown sugar in the filling to 3 tablespoons, as berries add extra sweetness and juice.
- Maple Bourbon Caramel: Stir 1 tablespoon of bourbon and 1 tablespoon of maple syrup into the salted caramel sauce before drizzling. This adds a smoky, autumnal twist that complements the apples without overwhelming them.
Storage and make-ahead
- Fridge
- Refrigerate leftover crisp in an airtight container for up to 4 days. Reheat in a 350°F oven for 10-15 minutes to re-crisp the topping.
- Freezer
- Freeze the baked and cooled crisp for up to 3 months. Wrap tightly in plastic wrap and foil.
- Reheat
- To reheat individual portions, microwave for 30-60 seconds, but the topping will soften. For a crisp texture, reheat in a toaster oven at 350°F for 5-7 minutes.
Store leftover apple crisp in the skillet or transfer to an airtight container. Refrigerate within 2 hours of baking. The crisp will keep for up to 4 days in the fridge. The topping will soften over time, but you can reheat it in the oven to restore some crunch.
You can assemble the crisp up to a day ahead: prepare the apples and streusel, layer them in the skillet, cover, and refrigerate.
When ready to bake, add 5-10 minutes to the baking time since the filling will be cold. Alternatively, bake the crisp fully, let it cool, and refrigerate; reheat in a 350°F (175°C) oven for 15 minutes before serving.
Serving ideas
Serve the crisp warm, straight from the skillet, with a generous scoop of vanilla bean ice cream melting into the crevices. Drizzle salted caramel sauce over the top, letting it cascade down the sides.
For a pretty presentation, spoon the crisp into shallow bowls and add a small flourish of flaky sea salt if desired. A dollop of whipped cream or a spoonful of crème fraîche also works well in place of ice cream.
This dessert is perfect on its own, but it also pairs beautifully with a cup of strong coffee or a glass of bourbon. For a dinner party, serve it as the grand finale with a cheese board beforehand. Leftovers are delicious cold, straight from the fridge, but warm is truly the best way to enjoy the contrast of textures.

Skillet Apple Crisp with Salted Caramel & Vanilla Ice Cream

Ingredients
- 1 tbsp unsalted butter, softened
- 5 Honeycrisp or Granny Smith apples, peeled and sliced
- 1/4 cup brown sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter, cubed
- 1/2 tsp sea salt
- Salted caramel sauce, for drizzling, to taste
- Vanilla bean ice cream, for serving
Instructions
- Heat the oven to 350°F (175°C). Rub the inside of a 10-inch cast iron skillet with the softened butter. In the skillet, toss the sliced apples with the brown sugar, lemon juice, and cinnamon until evenly coated.
- In a separate bowl, combine the rolled oats, flour, brown sugar, and sea salt. Add the cold cubed butter and rub it into the dry ingredients with your fingertips until the mixture forms chunky, pea-sized buttery clusters.
- Scatter the oat streusel evenly over the apples in the skillet. Bake for 35 minutes, until the topping is deep golden brown and the apple juices are bubbling thickly around the edges.
- Let the crisp cool for 5 minutes on a wire rack (no longer than 2 hours before refrigerating any leftovers). Spoon into bowls and top each serving with a scoop of vanilla ice cream and a generous drizzle of salted caramel sauce.
