Tips for success

For the crispiest crust, make sure your sheet pan is hot when you pour in the batter. You can preheat the pan in the oven for a few minutes before adding the batter—just be careful when pouring. Also, avoid overfilling the pan; a thin layer is key to a crisp base.

If you like extra heat, add a pinch of red pepper flakes or a drizzle of hot honey before serving.

For a vegetarian version, omit the sucuk and add more vegetables like mushrooms or zucchini. The crepe crust is versatile, so feel free to experiment with your favorite pizza toppings.

Variations

  • Vegetarian: Omit the sucuk and add sautéed mushrooms, zucchini, or artichoke hearts. Use a mix of mozzarella and feta for a different flavor profile. Add fresh herbs like oregano or thyme before baking.
  • Spicy: Add sliced jalapeños or a drizzle of hot sauce before baking. Use spicy pepperoni instead of sucuk and add a sprinkle of red pepper flakes. Serve with a cooling yogurt dip.
  • Cheese Lover's: Increase the cheese to 3 cups and use a blend of mozzarella, cheddar, and provolone. Add a sprinkle of grated Parmesan on top before baking for extra savory flavor.
  • Breakfast: Swap the sucuk for cooked breakfast sausage and add a handful of spinach. Top with a few extra eggs beaten and scrambled, then bake. Serve with a side of hot sauce.

Leftover pizza can be stored in an airtight container in the refrigerator for up to 3 days.

To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes, or until the cheese is melted and the crust is crisp again. Avoid microwaving, as it will make the crust soggy.

The crepe batter can be made up to 24 hours ahead and stored in the refrigerator. You can also bake the crepe crust, cool it completely, and then top and refrigerate it for up to 1 day before baking.

When ready to serve, add the toppings and bake as directed, adding a few extra minutes if starting from cold.

Serving ideas

Serve this crepe pizza hot from the oven, cut into squares or rectangles. It's perfect as a main dish with a simple green salad on the side, or as a party appetizer cut into smaller pieces.

The combination of crispy crust, melted cheese, and spicy sucuk is sure to be a hit.

For a complete meal, pair it with a bowl of soup or a fresh vegetable side. The pizza is also great for lunch the next day—serve it cold or reheated. If you're hosting, set out a spread of dipping sauces like garlic yogurt or spicy tomato sauce for extra indulgence.

Frequently asked questions

Can the crepe pizza be made gluten-free?
Yes, you can substitute the all-purpose flour with a gluten-free all-purpose blend. Look for one that contains xanthan gum for better structure. The texture may be slightly more delicate, so handle with care. Also, ensure your sucuk and cheese are gluten-free, as some brands may contain fillers.
What can be used instead of beef sucuk?
If you can't find sucuk, you can use a spicy Italian sausage, chorizo, or even pepperoni. For a milder option, use sliced turkey sausage or omit the meat entirely. Just make sure to cook raw sausage before adding it to the pizza, and adjust the seasoning to taste.
Why does the crust sometimes come out soggy?
A soggy crust is usually caused by too much moisture in the toppings. Make sure to pat the peppers and corn dry before scattering them. Also, avoid overloading the pizza with cheese, as excess oil can seep into the crust. Baking on a preheated sheet pan can also help create a crisper bottom.
Can the batter be made ahead of time?
Absolutely. The batter can be blended and stored in the refrigerator for up to 24 hours. Give it a quick whisk before using, as the flour may settle. You can also freeze the batter for up to 2 months; thaw overnight in the fridge before using.
Is it necessary to use a sheet pan?
A sheet pan is ideal for this recipe because it provides a large, even surface for the thin crust. You can use a large rimmed baking sheet or even a couple of round pizza pans. Just adjust the baking time slightly if using a smaller pan, as the crust will be thicker.

Golden sheet pan crepe pizza topped with melted cheese, sucuk slices, peppers, and corn

Ingredients

  • 2 large eggs
  • 2 cups milk
  • 3 tbsp vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 cups shredded kaşar cheese
  • 8 oz beef sucuk, sliced
  • 1 cup diced red and green bell peppers
  • 1 cup sweet corn kernels

Instructions

  1. In a blender, combine the eggs, milk, vegetable oil, all-purpose flour, and salt. Blend on high for 30 seconds until the mixture is completely silky and bubble-free. Scrape down the sides if needed and blend again briefly.
  2. Pour the batter into a greased 12x17-inch sheet pan. Tilt the pan to spread the batter evenly across the bottom. The layer should be thin, about 1/8 inch thick.
  3. Place the sheet pan in the oven and bake at 400°F (200°C) for 10 minutes, until the crepe is just set and lightly golden around the edges.
  4. Remove the pan from the oven. Scatter the shredded kaşar cheese evenly over the crepe, leaving a small border. Arrange the sliced beef sucuk, diced bell peppers, and corn kernels over the cheese.
  5. Return the pan to the oven and bake for another 15 minutes, until the cheese is melted and bubbly, the edges are browned, and the sucuk is sizzling.
  6. Remove the pizza from the oven and let it rest for 2 minutes. Use a pizza wheel or knife to slice into squares or rectangles. Serve hot to enjoy the cheese pull.
