Before you start

Preheat the oven to 400°F (200°C). Lightly grease a 12x17-inch sheet pan with oil or nonstick spray. Gather all your ingredients: eggs, milk, oil, flour, salt, cheese, sucuk, peppers, and corn.

If using frozen corn, thaw it and pat dry. Slice the sucuk into thin rounds and dice the peppers. Measure out the cheese so everything is ready to go.

Ingredients at a glance (9)
  • 2 large eggs
  • 2 cups milk
  • 3 tbsp vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 cups shredded kaşar cheese
  • 8 oz beef sucuk, sliced
  • 1 cup diced red and green bell peppers
  • 1 cup sweet corn kernels

Instructions

Blend and Pour

  1. Blend the Crepe Batter
In a blender, combine the eggs, milk, vegetable oil, all-purpose flour, and salt. Blend on high for 30 seconds until the mixture is completely silky and bubble-free. Scrape down the sides if needed and blend again briefly.
Look for The batter should be smooth and thin, like heavy cream.
Tip Blending longer ensures a tender, even crepe crust.
  2. Prepare the Sheet Pan
Pour the batter into a greased 12x17-inch sheet pan. Tilt the pan to spread the batter evenly across the bottom. The layer should be thin, about 1/8 inch thick.
Look for The batter should cover the entire pan in a thin, even layer.
Tip Use a spatula to help spread if needed.

The batter should be smooth and free of lumps, with a consistency similar to heavy cream. When poured into the pan, it should spread easily and evenly.

The pan should be level so the batter doesn't pool in one corner. The batter will look pale and thin, but that's exactly what you want.

Top and Bake

  1. Bake the Crepe Crust
Place the sheet pan in the oven and bake at 400°F (200°C) for 10 minutes, until the crepe is just set and lightly golden around the edges.
Look for The crepe should be firm enough to hold the toppings.
Tip Don't overbake at this stage; it will finish cooking with the toppings.
  2. Add the Toppings
Remove the pan from the oven. Scatter the shredded kaşar cheese evenly over the crepe, leaving a small border. Arrange the sliced beef sucuk, diced bell peppers, and corn kernels over the cheese.
Look for The toppings should be distributed evenly for consistent bites.
Tip Layer the cheese first to help the toppings stick to the crust.
  3. Bake Until Golden and Puffed
Return the pan to the oven and bake for another 15 minutes, until the cheese is melted and bubbly, the edges are browned, and the sucuk is sizzling.
Look for The cheese should be golden in spots and the crust should be crisp.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the top browns too quickly, tent loosely with foil.

After the first bake, the crepe should be set and lightly golden around the edges, but still pale in the center. Once the toppings are added, the cheese should melt and bubble, and the edges of the sucuk will crisp up. The kitchen will smell of toasted cheese and spices.

Slice and Serve

  1. Slice and Serve Hot
Remove the pizza from the oven and let it rest for 2 minutes. Use a pizza wheel or knife to slice into squares or rectangles. Serve hot to enjoy the cheese pull.
Look for The cheese should stretch when sliced.
Tip For clean slices, use a sharp pizza wheel and cut with a gentle sawing motion.

The finished pizza should have a deeply browned, crisp crust, and the cheese should be molten and stretchy. When you slice it, the cheese should pull into long strands. The sucuk should be slightly crispy at the edges, and the peppers and corn should be tender.

Common mistakes

One common mistake is overloading the crust with too many wet toppings, which can make it soggy. Stick to the amounts given and pat the peppers and corn dry before scattering.

Another pitfall is underbaking: the crust needs the full 25 minutes to become crisp. Finally, don't skip the resting time before slicing—it allows the cheese to set slightly and makes for cleaner cuts.

How to tell it’s done

The pizza is done when the cheese is fully melted and golden in spots, the sucuk is sizzling and slightly crispy at the edges, and the crepe crust is deeply browned and crisp around the edges.

To ensure the eggs are fully cooked, the internal temperature of the crust should reach at least 160°F (71°C). The center should be set and not jiggly.

  • Egg dishes: 160°F (71°C) in the thickest part
  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
