Tips for success
For the best flavor, use high-quality Italian sausage from a butcher or a good grocery store. The casing should be natural and the meat well-seasoned.
If you prefer a spicier dish, choose hot sausage or add a pinch of red pepper flakes along with the cherry peppers. You can also add other vegetables like zucchini or mushrooms, but keep them in a single layer to ensure even cooking.
To make this a complete meal, serve the sausage and peppers in crusty rolls for a sandwich, or over cooked polenta, rice, or pasta. The pan juices are delicious spooned over the top. For a lighter option, serve alongside a crisp green salad. Leftovers can be stored in the refrigerator for up to 4 days and reheated gently in a skillet or microwave.
Variations
- Spicy Hot Sausage: Use hot Italian sausage links instead of sweet, and add a pinch of red pepper flakes along with the cherry peppers for extra heat. The spice level will be noticeably higher, but still balanced by the sweetness of the peppers and onions.
- Pepper and Onion Mix: Swap one green bell pepper for a red or yellow one to add sweetness and color. You can also add a sliced fennel bulb along with the onions for a subtle anise flavor that pairs beautifully with sausage.
- Cheesy Finish: During the last 5 minutes of roasting, sprinkle the sausages and vegetables with shredded provolone or mozzarella. Let it melt and bubble before serving. This turns the dish into a gooey, indulgent meal.
- Sausage Sandwiches: Serve the cooked sausage and peppers in crusty hoagie rolls. Spoon the pan juices over the filling and top with a few extra cherry pepper rings. This makes a fantastic casual dinner or game-day sandwich.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently before serving.
- Freezer
- Freeze cooked sausage and peppers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat in a skillet or oven.
- Reheat
- Reheat in a skillet over medium heat, stirring occasionally, until warmed through. Or microwave in 30-second bursts, stirring between, until hot.
Store leftover sausage and peppers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and intensify overnight. Reheat gently in a skillet over medium heat, or in the microwave in 30-second intervals, until warmed through. Avoid overheating to prevent the sausages from becoming tough.
You can prep the vegetables and sausage up to a day ahead. Slice the peppers and onion, and arrange everything on the sheet pan, but don't drizzle with oil and brine until just before roasting.
Cover and refrigerate the pan. When ready to cook, preheat the oven, drizzle, and roast as directed. The cooking time may increase by a few minutes if the ingredients are cold from the fridge.
Serving ideas
Serve the sausage and peppers hot from the oven, with the pan juices spooned over the top. This dish is hearty enough to stand alone, but it also pairs well with crusty bread, polenta, or rice.
For a casual meal, pile the sausages and peppers into hoagie rolls and top with a little provolone or mozzarella, if desired. The tangy cherry peppers add a bright, spicy note that complements the rich sausage.
For a more formal presentation, arrange the sausages on a platter with the peppers and onions mounded in the center, and scatter a few extra cherry pepper rings on top.
Serve with a green salad and a glass of Italian red wine, like Chianti or Sangiovese. This dish is also great for feeding a crowd—simply double the recipe and use two sheet pans, rotating them halfway through cooking.

Sheet Pan Cherry Pepper Sausage and Peppers

Ingredients
- 1 1/2 lb Italian sausage links (sweet or hot)
- 2 green bell peppers, sliced into strips
- 1 large onion, cut into wedges
- 1/2 cup pickled cherry peppers, drained and sliced into rings
- 2 tbsp olive oil
- 2 tbsp brine from the cherry pepper jar
Instructions
- Heat the oven to 400°F (200°C). Line a sheet pan with parchment paper. Place the sausage links, green pepper strips, and onion wedges in a single layer on the pan, spreading them out evenly. Scatter the cherry pepper rings over the top. Drizzle the olive oil and cherry pepper brine over everything, using a small pitcher or spoon to distribute it evenly.
- Place the sheet pan in the oven and roast for 25 minutes. Remove the pan and use a metal spatula to turn the sausage links and toss the vegetables gently. Return the pan to the oven and continue roasting for 10 to 15 minutes more, until the sausages are browned and cooked through and the peppers and onions are soft and lightly charred at the edges.
- Remove the sheet pan from the oven. Let the sausages and vegetables rest for 3 minutes before serving. Use a spatula to lift the sausages and vegetables onto a serving platter, spooning any pan juices over the top. Serve warm.
