Before you start

Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper. Slice the green bell peppers into strips about 1/2 inch wide. Cut the onion into wedges, keeping the root end intact so they hold together.

Drain the cherry peppers and slice them into rings; reserve 2 tablespoons of the brine. Arrange the sausage links, pepper strips, and onion wedges in a single layer on the prepared pan. Scatter the cherry pepper rings over the top, then drizzle with olive oil and the reserved brine.

Ingredients at a glance (6)
  • 1 1/2 lb Italian sausage links (sweet or hot)
  • 2 green bell peppers, sliced into strips
  • 1 large onion, cut into wedges
  • 1/2 cup pickled cherry peppers, drained and sliced into rings
  • 2 tbsp olive oil
  • 2 tbsp brine from the cherry pepper jar

Instructions

Arrange and Drizzle

  1. Arrange the ingredients
Heat the oven to 400°F (200°C). Line a sheet pan with parchment paper. Place the sausage links, green pepper strips, and onion wedges in a single layer on the pan, spreading them out evenly. Scatter the cherry pepper rings over the top. Drizzle the olive oil and cherry pepper brine over everything, using a small pitcher or spoon to distribute it evenly.
Look for Ingredients are in one even layer, with sausage and vegetables spread out so they roast evenly.
Tip Use a parchment-lined pan for easy cleanup and to prevent sticking.

At the end of this phase, the sheet pan holds raw sausages, pepper strips, onion wedges, and cherry pepper rings in a single even layer. The olive oil and brine are drizzled over everything, giving the vegetables a glossy sheen.

The pan looks colorful and vibrant, with the green peppers and red cherry peppers standing out against the pale sausages and white onion. The ingredients are ready to go into the oven, and the kitchen smells faintly of olive oil and pickled peppers.

Roast and Turn

  1. Roast until browned and tender
Place the sheet pan in the oven and roast for 25 minutes. Remove the pan and use a metal spatula to turn the sausage links and toss the vegetables gently. Return the pan to the oven and continue roasting for 10 to 15 minutes more, until the sausages are browned and cooked through and the peppers and onions are soft and lightly charred at the edges.
Look for The sausages are browned and firm to the touch, and the vegetables are tender and slightly caramelized.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Turn the sausages halfway through so they brown evenly on all sides.

After about 25 minutes, the pan is sizzling and the sausages have started to brown. The peppers and onions are softening and releasing their juices, and the cherry peppers have deepened in color. The kitchen fills with the savory aroma of roasting sausage and sweet peppers.

After turning the sausages and returning the pan to the oven, the ingredients continue to caramelize. By the end, the sausages are deeply browned, the vegetables are tender and lightly charred, and the pan juices are bubbling.

Rest and Serve

  1. Rest and serve
Remove the sheet pan from the oven. Let the sausages and vegetables rest for 3 minutes before serving. Use a spatula to lift the sausages and vegetables onto a serving platter, spooning any pan juices over the top. Serve warm.
Look for The sausages rest, the juices settle, and everything is glossy with oil and brine.
Tip Resting the sausages helps the juices redistribute, keeping them moist.

The sheet pan comes out of the oven with everything glistening. The sausages are firm to the touch and have a rich brown color. The peppers and onions are soft and have collapsed slightly, and the cherry pepper rings are still intact.

The pan juices are reduced and flavorful. After a brief rest, the sausages are lifted with a spatula, and the vegetables are piled alongside them on a serving platter. The dish is ready to be served, with a final spoonful of juices over the top.

Common mistakes

One common mistake is overcrowding the pan, which causes the ingredients to steam instead of roast. Make sure everything is in a single layer with a little space between pieces. Another is not turning the sausages halfway through, leading to uneven browning. Also, be careful not to over-roast the vegetables; they should be tender but not mushy. Finally, don't skip the resting time—cutting the sausages too soon can cause them to lose their juices and become dry.

How to tell it’s done

The sausages are done when they are browned on the outside and reach an internal temperature of 160°F (71°C) on an instant-read thermometer. The peppers and onions should be soft and slightly caramelized at the edges, with a few charred spots for flavor. If you don't have a thermometer, cut into a sausage to check that it is no longer pink in the center and the juices run clear. Let the sausages rest for 3 minutes before serving to allow the juices to redistribute.

  • Ground meat: 160°F (71°C) in the thickest part
