Before you start

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper. Dice the sucuk, red bell pepper, and green pepper, and shred the kaşar cheese if not already shredded.

Measure out all the ingredients and have them ready. Whisk the eggs, milk, and oil together in a large bowl, then add the dry ingredients and mix until smooth. The batter should be thick but pourable.

Ingredients at a glance (11)
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 1/2 cups all-purpose flour
  • 1 cup diced sucuk (Turkish sausage)
  • 1 cup sweet corn kernels
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 1 1/2 cups shredded kaşar cheese

Instructions

Batter and Spread

  1. Make the Batter
In a large bowl, whisk the eggs, milk, and vegetable oil until well combined. Add the baking powder, salt, and flour, and whisk until a thick, pourable batter forms with no lumps.
Look for The batter should be smooth and thick enough to coat a spoon.
Tip Whisk vigorously for about 1 minute to ensure the baking powder is evenly distributed.
  2. Spread on Baking Sheet
Line a baking sheet with parchment paper. Pour the batter onto the sheet and use a spatula to spread it evenly into a uniform, flat layer, reaching all the way to the edges.
Look for The batter should be level and about 1/4-inch thick.
Tip Use an offset spatula for the smoothest, most even layer.

The batter should be smooth, thick, and free of lumps. When poured onto the baking sheet, it should spread evenly and stay in place, not run to the edges. The layer should be uniform, about 1/4-inch thick, and cover the entire sheet. The surface should look glossy and smooth, ready for toppings.

Toppings and Bake

  1. Add Toppings
Scatter the diced sucuk, sweet corn, red bell pepper, and green pepper evenly over the batter. Then blanket the top with the shredded kaşar cheese.
Look for The toppings should cover the surface evenly, with cheese completely covering the other ingredients.
Tip Distribute the sucuk and peppers in small clusters for even flavor in every bite.
  2. Bake
Slide the baking sheet into an oven preheated to 350°F (180°C). Bake for 25 minutes, until the edges are golden brown, the cheese is bubbly, and the center is set.
Look for The top should be puffed and golden, and a toothpick inserted in the center should come out clean.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the pan halfway through baking for even browning.

The toppings should be evenly distributed, with the cheese completely covering the other ingredients. As it bakes, the cheese will melt and bubble, and the edges will turn golden brown.

The kitchen will smell of savory sausage and toasted bread. The top should be puffed and lightly browned, and the center should be set, not jiggly.

Roll and Serve

  1. Slice and Roll
Remove from the oven and let cool for 2 minutes. Slice into squares, then roll each square up tightly while warm to form rolls.
Look for The rolls should hold their shape and show a spiral of filling.
Tip Use a spatula to lift each square; the warmth makes them pliable.
  2. Serve
Serve the rolls warm, seam-side down, with extra cheese or a dipping sauce if desired. Enjoy the fluffy texture and savory filling.
Look for The rolls should be golden and aromatic.
Tip These are best eaten fresh out of the oven.

After cooling for a couple of minutes, the pizza should be firm enough to slice into squares without falling apart. The squares should be pliable and easy to roll, with the filling staying inside. The rolls should hold their shape and show a spiral of cheese and sausage when cut. Serve warm for the best texture and flavor.

Common mistakes

One common mistake is overmixing the batter, which can make the bread tough. Mix just until the flour is incorporated. Another is spreading the batter too thick, which results in a doughy center.

Aim for an even, thin layer. Also, be sure to roll the squares while they’re still warm; if they cool completely, they may crack. If that happens, warm them briefly in the microwave.

How to tell it’s done

The pizza is done when the top is golden brown and puffed, the cheese is melted and bubbly, and the edges are set. A toothpick inserted into the center should come out clean.

To ensure the eggs are fully cooked, the internal temperature of the batter should reach at least 160°F (71°C). Let the pizza cool for a couple of minutes before slicing and rolling.

  • Egg dishes: 160°F (71°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
