Tips for success
Keep the assembly line moving: warm tortillas, fill, roll, place, repeat. Sixteen taquitos roll in under ten minutes once the filling is made, but only if the tortillas stay hot and covered.
If the batch outpaces the steamer, re-wrap and re-steam the remaining stack for 30 seconds rather than fighting cracked tortillas.
For extra insurance against unrolling, place the taquitos in connected rows with the seams pressed against the neighboring roll; the contact holds them shut while they bake.
Rotate the pan halfway through so the backs brown evenly, and flip for the last two or three minutes if deeper color is wanted on the tops.
Variations
- Chicken taquitos: Swap the ground beef for 1 lb ground chicken, cooking it the same way to 165°F (74°C) before adding the cream cheese, salsa and seasoning. The filling turns slightly lighter and sweeter; add an extra 1/2 tsp of taco seasoning to compensate.
- Extra-spicy version: Use hot salsa, add 1/4 tsp cayenne to the beef along with the taco seasoning, and finish the platter with a drizzle of chipotle hot sauce. The cream cheese keeps the heat from overwhelming the filling.
- Black bean and cheddar: Replace the beef with 1 cup of well-drained black beans, mashed lightly and warmed with the cream cheese, salsa and seasoning. Roll and bake exactly as written for a meatless pan that still crisps beautifully.
- Flour tortilla taquitos: Use 8 to 10 small flour tortillas instead of corn. They roll tighter and stay pliable longer, but brown faster — reduce the bake to 12 to 14 minutes and watch the tops closely for deep golden color.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container up to 3 days; the shells soften but crisp right back up when reheated.
- Freezer
- Freeze baked, cooled taquitos in a single layer, then bagged, up to 2 months; reheat from frozen without thawing.
- Reheat
- Bake at 425°F for 8 to 10 minutes from the fridge, or 15 to 18 minutes from frozen. Skip the microwave — it makes the shells chewy.
Cool leftovers no more than 2 hours at room temperature, then transfer to an airtight container with a paper towel underneath to catch condensation. The shells soften in the refrigerator but recover well under high dry heat. Eat within 3 days for the best texture.
The beef filling can be made up to 2 days ahead and refrigerated in a covered container; reheat it gently on the stove until warm and spreadable before rolling.
Rolled, unassembled taquitos can also be built in the morning, covered on the sheet pan, and baked straight from the refrigerator with 2 extra minutes of baking time.
Serving ideas
Serve the taquitos lined up on a long platter with three dip bowls: cool guacamole, hot pourable queso blanco and bright pico de gallo.
The contrast of temperatures is part of the appeal — the hot, crunchy roll against the cool avocado and the fresh tomato relish. Pull the first one apart in front of the table while the cheddar still stretches.
For a dinner spread, add a simple side of seasoned rice or a crisp cabbage slaw with lime, and set out lime wedges and a bottle of hot sauce for anyone who wants more heat. Two taquitos per person is a good baseline for adults, with a third for big appetites — plan the pan accordingly when the table is full.

Sheet-Pan Beef and Cheddar Taquitos for a Fast Family Dinner

Ingredients
- 1 lb ground beef
- 4 oz cream cheese, softened
- 1/2 cup salsa
- 2 tbsp taco seasoning
- 1 1/2 cups shredded cheddar
- 16 corn tortillas, warmed
- Avocado oil, to taste, for spraying
- 1/2 tsp kosher salt
- Guacamole, for serving
- Queso blanco, warmed, for serving
- Pico de gallo, for serving
Instructions
- Set a large skillet over medium-high heat and add the ground beef, breaking it into small crumbles with a wooden spoon as it browns. Cook, stirring occasionally, until no pink remains and the meat is cooked through to 160°F (71°C), about 6 to 8 minutes.
- Drain excess fat if needed, then reduce the heat to medium-low. Add the cream cheese, salsa and taco seasoning, stirring until the cream cheese melts completely and coats the beef in a glossy, cohesive sauce, about 2 minutes.
- Transfer the filling to a shallow bowl and let it stand 5 minutes so it firms up slightly and stops steaming. A cooler filling is easier to roll and melts the cheese in the tortillas far less during assembly.
- Wrap the corn tortillas in a damp paper towel and microwave in two stacks for 45 to 60 seconds, until they are steamed through and bend without cracking. Keep them wrapped so they stay warm while rolling.
- Spoon about 2 tablespoons of beef filling in a line along the lower third of each warm tortilla, top with a generous pinch of shredded cheddar, and roll tightly away from you. Place seam-side down on a cutting board as you go.
- Line a large sheet pan with parchment and set the taquitos seam-side down in snug rows, sides just touching. A connected row keeps every roll from unspinning and lets the pan hold all sixteen at once.
- Spray the tops of the rolled taquitos evenly with avocado oil, then sprinkle the kosher salt across the whole pan. The thin oil film is what turns the tortilla surface into the shattering, blistered shell everyone reaches for first.
- Bake at 425°F (218°C) for about 16 minutes, rotating the pan halfway through, until the edges are deep golden and the shells feel firm and crackly when tapped. If the tops need more color, flip and bake 2 to 3 minutes more.
- Transfer the taquitos to a platter in tidy rows and serve right away with bowls of guacamole, warmed queso blanco and pico de gallo alongside. Pull one apart while the cheddar still stretches for the full effect.
