This is the copycat barbacoa burrito that gets sliced open on camera: glossy chipotle-braised chuck roast, fluffy cilantro-lime rice, black beans, roasted corn salsa and a full scoop of guacamole, all rolled into a foil-steamed tortilla with plenty of Monterey Jack. The braise does the heavy lifting in one pot, and the two-minute foil rest at the end makes the tortilla soft and the cheese melty.

The appeal of a great barbacoa burrito is contrast: smoky, clove-scented shredded beef against cool guacamole, bright lime rice against molten cheese. This version builds all of it at home with a single braise and a short assembly line. Chuck roast is the right cut — marbled enough to stay juicy through a long braise, and it shreds into long, tender strands that soak up the adobo sauce.

Chipotles in adobo bring smoke and heat, cider vinegar sharpens everything, and ground cloves with cumin and oregano give that familiar restaurant-style depth.

A 12-inch tortilla packed generously, wrapped in foil and rested briefly steams itself into that soft, sealed texture that slices cleanly instead of spilling. Serve it hot, cut in half, and it looks exactly like the burrito everyone stops scrolling for.

Why this recipe works

Braising is the method that makes barbacoa work at home. Chuck roast is full of connective tissue that turns into tender gelatin over three hours of low, moist heat, which is why the meat pulls apart into silky strands instead of drying out.

Searing first builds a brown crust that deepens the whole pot, and the braising liquid — chipotles, vinegar, cloves, cumin and oregano — seasons the beef from every side as it cooks.

The foil rest is the second half of the method. A burrito straight off the board is warm but disjointed; wrapped tightly in foil for two minutes, the trapped steam softens the tortilla so it clings to the filling, and the residual heat melts the Monterey Jack into a binder that holds each layer in place.

That is why the cross-section slices clean, with the guacamole sitting as a defined green core rather than smearing everywhere.

Notes and substitutions

Buy a well-marbled chuck roast around 2 pounds and trim only the hard fat; the marbling is what keeps the shreds moist. Chipotles in adobo come in small cans — use the whole can's worth of sauce if the peppers alone taste mild. Monterey Jack melts smoothly, but pepper Jack is a fair swap. The corn salsa and guacamole can be store-bought or made earlier in the day; both are treated as ready fillings here.

Equipment is simple: a heavy Dutch oven for the braise, two forks for shredding, and heavy-duty aluminum foil for the wrap. If the braise runs low on liquid, top up with water rather than broth so the seasoning stays balanced. Leftover braising liquid, skimmed of fat, is excellent spooned over the shredded beef before assembling.

  • chuck roast: Beef short ribs or beef shank braise the same way; allow extra time until the meat shreds with no resistance.
  • Monterey Jack cheese: Shredded pepper Jack adds mild heat, or use Oaxaca cheese for an authentic stretchy melt.
  • roasted corn salsa: Drained canned corn charred in a dry skillet with diced onion, jalapeño and lime juice works in a pinch.
  • beef broth: Water with an extra tablespoon of adobo sauce keeps the braise flavorful without opening a carton.
