Tips for success
For the crispiest exterior, use a well-seasoned cast-iron skillet and make sure it's hot before adding the batter. The oil should shimmer but not smoke.
If you prefer a softer pancake, reduce the cooking time slightly and keep the heat at medium-low. The resting period after cooking is crucial: it allows the cheese to set just enough that the wedges hold together without being stiff.
To make this dish even more flavorful, consider adding a pinch of red pepper flakes or a dash of smoked paprika to the batter. If you like a stronger herb presence, increase the parsley or add a sprinkle of dried oregano.
Serve with a dollop of plain yogurt or a simple garlic-yogurt sauce on the side for dipping. Leftover wedges are delicious reheated in a dry skillet until warm and crisp.
Variations
- Spicy Pepperoni: Replace sucuk with finely diced pepperoni and use mozzarella instead of kashar. Add a pinch of dried oregano to the batter for an Italian twist.
- Vegetarian Delight: Omit the sausage and add 1 cup of sautéed mushrooms and bell peppers. Use a mild cheese like fontina or provolone for a rich, earthy flavor.
- Herb and Cheese: Skip the meat entirely and double the parsley, adding 1 tablespoon of chopped fresh dill or chives. Use a combination of kashar and feta for a tangy, fresh taste.
- Breakfast Sausage: Swap sucuk for cooked breakfast sausage crumbles and use cheddar cheese. Serve with a drizzle of maple syrup for a sweet-savory breakfast treat.

Store leftover wedges in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through and crisp on the outside. Avoid microwaving, as it can make the pancake soggy.
The batter can be made up to 2 hours ahead and kept covered in the refrigerator. Let it come to room temperature before cooking. Cooked wedges can be refrigerated and reheated in a toaster oven or skillet for a quick breakfast or snack.
Serving ideas
Serve these savory pancake wedges warm, straight from the skillet, with a side of plain yogurt or a simple tomato-cucumber salad. They're hearty enough to stand alone as a main dish for breakfast or brunch.
For a more substantial meal, pair them with a fried egg or a bowl of soup. The combination of crispy edges, soft interior, and gooey cheese is irresistible.
These wedges also work well as an appetizer or party snack. Cut them into smaller pieces and arrange on a platter with toothpicks.
They're best enjoyed within an hour of cooking, while the cheese is still melty and the exterior is crisp. If serving later, reheat them in a 350°F (175°C) oven for a few minutes to revive the texture.

Savory Sucuk and Cheese Pancake Pizza Wedges

Ingredients
- 2 large eggs
- 1 cup warm milk
- 1 cup warm water
- 50 ml vegetable oil
- 1 tsp salt
- 1 tsp dry yeast
- 1 tsp baking powder
- 2 1/2 cups all-purpose flour
- 1 cup finely diced sucuk beef sausage
- 1 cup shredded kashar cheese
- 1/4 cup chopped fresh parsley
- 2 tbsp melted butter
Instructions
- In a large mixing bowl, combine the eggs, warm milk, warm water, vegetable oil, salt, dry yeast, and baking powder. Whisk vigorously until the mixture is frothy and the yeast is dissolved. Let it sit for 2–3 minutes to activate the yeast slightly.
- Whisk in the all-purpose flour, 1/2 cup at a time, until the batter is smooth and has no lumps. Fold in the finely diced sucuk sausage, shredded kashar cheese, and chopped fresh parsley until evenly distributed throughout the batter.
- Heat a 10-inch nonstick skillet over medium heat and lightly grease with oil. Pour the batter into the skillet and spread it evenly. Cook for 5–6 minutes, until the bottom is golden brown and the edges look set.
- Carefully flip the pancake using a wide spatula. Brush the top with melted butter. Cook for 3 more minutes, until the bottom is crisp and golden brown.
- Slide the cooked pancake onto a wooden board. Let it rest for 5 minutes so the cheese sets slightly. Cut into 8 pizza-style wedges using a sharp knife or pizza cutter.
