Before you start

Before starting, measure all ingredients and have them at room temperature if possible. Warm the milk and water together until they feel like warm bathwater (about 110°F / 43°C). Finely dice the sucuk sausage into small, even pieces so they distribute well.

Shred the kashar cheese if you bought it in a block. Chop the parsley and set everything near the stove. Have your skillet, spatula, pastry brush, and cutting board ready. This recipe moves quickly once the batter is mixed, so prep everything first.

Ingredients at a glance (12)
  • 2 large eggs
  • 1 cup warm milk
  • 1 cup warm water
  • 50 ml vegetable oil
  • 1 tsp salt
  • 1 tsp dry yeast
  • 1 tsp baking powder
  • 2 1/2 cups all-purpose flour
  • 1 cup finely diced sucuk beef sausage
  • 1 cup shredded kashar cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp melted butter

Instructions

Mix and Fold

  1. Mix the batter
In a large mixing bowl, combine the eggs, warm milk, warm water, vegetable oil, salt, dry yeast, and baking powder. Whisk vigorously until the mixture is frothy and the yeast is dissolved. Let it sit for 2–3 minutes to activate the yeast slightly.
Look for The liquid should be pale yellow and have a layer of small bubbles on top.
Tip Use warm but not hot liquid—about 110°F (43°C)—to help the yeast bloom without killing it.
  2. Add flour and fold-ins
Whisk in the all-purpose flour, 1/2 cup at a time, until the batter is smooth and has no lumps. Fold in the finely diced sucuk sausage, shredded kashar cheese, and chopped fresh parsley until evenly distributed throughout the batter.
Look for The batter should be thick but pourable, similar to a pancake batter, with bits of sausage and cheese visible.
Tip Do not overmix after adding the flour—stir just until combined to keep the pancake tender.

After mixing, the batter should be smooth, thick, and pourable, with small bubbles on the surface. The sucuk, cheese, and parsley should be evenly distributed throughout. The batter will smell yeasty and savory, with a hint of garlic from the sausage.

It should hold its shape when scooped with a spoon but still fall easily from the whisk. If it looks too thick, add a little warm milk; if too thin, add a tablespoon of flour.

Cook and Flip

  1. Cook the first side
Heat a 10-inch nonstick skillet over medium heat and lightly grease with oil. Pour the batter into the skillet and spread it evenly. Cook for 5–6 minutes, until the bottom is golden brown and the edges look set.
Look for The top will still look slightly moist, but the bottom should be deeply golden and release easily from the pan.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a spatula to gently lift one edge to check the color without disturbing the rest.
  2. Flip and brush with butter
Carefully flip the pancake using a wide spatula. Brush the top with melted butter. Cook for 3 more minutes, until the bottom is crisp and golden brown.
Look for The butter sizzles on contact, and the pancake smells toasty and savory.
Tip If flipping feels risky, slide the pancake onto a plate, invert it back into the pan, and continue cooking.

The bottom should be golden brown and crisp, and the edges will look set and slightly puffed. When you lift a corner with a spatula, you should see a deep caramelized color. The top will still look moist but should not be runny. The aroma of toasting bread, melted cheese, and spicy sausage will fill the kitchen. After flipping, the second side cooks quickly, so watch closely to prevent burning.

Rest and Serve

  1. Rest and cut into wedges
Slide the cooked pancake onto a wooden board. Let it rest for 5 minutes so the cheese sets slightly. Cut into 8 pizza-style wedges using a sharp knife or pizza cutter.
Look for The interior should look soft and airy with pockets of melted cheese and sausage.
Tip A pizza cutter makes clean cuts without dragging the filling.

The pancake should rest on a cutting board for a few minutes before slicing. The surface will be glossy from the butter, and the interior should look soft and airy when you cut into it. You'll see pockets of melted cheese and bits of sausage throughout. The wedges should hold their shape without crumbling. Serve warm, with the cheese still slightly stretchy.

Common mistakes

One common mistake is using liquids that are too hot, which kills the yeast and leaves a dense pancake. Another is overmixing the batter after adding flour, which develops gluten and makes the pancake tough. Flipping too early can cause the pancake to break; wait until the bottom is deeply golden and the top looks set.

Using a skillet that's too small or too large affects thickness—stick to a 10-inch pan for the best ratio. Finally, cutting into the pancake immediately after cooking can cause the cheese to ooze out, so let it rest briefly.

How to tell it’s done

The pancake is done when both sides are deeply golden brown and the interior is cooked through. The bottom should be crisp and release easily from the pan. When you press the center, it should feel firm and spring back slightly.

To be safe, check that the internal temperature reaches 160°F (71°C) in the thickest part, especially where the sausage is. The cheese should be fully melted and the edges should look set. After resting, the pancake should hold its shape when cut into wedges.

  • Ground meat: 160°F (71°C) in the thickest part
