Tips for success
For the best texture, serve these bars chilled or at cool room temperature. If they sit out too long, the chocolate may soften and the kataifi may lose some crunch. To cut cleanly, use a sharp knife and wipe it between cuts.
If you want extra raspberry flavor, add a few whole freeze-dried raspberries into the filling before sealing. The bars are best enjoyed within 3 days; after that, the kataifi may soften slightly.
When tempering chocolate, work in a cool, dry room. Avoid getting any water in the chocolate, as it will cause it to seize. If you don't have a thermometer, you can test the temper by spreading a small amount on parchment; it should set within 5 minutes and have a glossy sheen.
For a more intense pistachio flavor, toast the pistachio cream in a dry skillet for a minute before using. This enhances the nuttiness without changing the texture.
Variations
- Dark Chocolate Version: Swap ruby chocolate for dark chocolate (60-70%) and use a dark chocolate ganache. The tart raspberry and pistachio filling will still shine against the rich, bitter chocolate.
- Nut-Free Option: Replace pistachio cream with sunflower seed butter or a nut-free cookie butter. Omit the pistachio garnish and use extra freeze-dried raspberries for color and crunch.
- Extra Fruity: Fold 1/4 cup finely chopped fresh raspberries into the filling before molding. This adds a burst of fresh fruit flavor, but be sure to pat them dry to avoid excess moisture.
- Spiced Twist: Add 1/2 teaspoon ground cardamom or cinnamon to the kataifi while toasting. The warm spice complements the pistachio and raspberry beautifully.

Ruby Raspberry Pistachio Crunch Bars

Ingredients
- 1 1/2 cups shredded kataifi pastry
- 2 tbsp unsalted butter
- 3/4 cup white chocolate raspberry ganache
- 1/2 cup pistachio cream
- 12 oz ruby chocolate, chopped
- 1/4 cup freeze-dried raspberries, crushed
Instructions
- In a large skillet over medium heat, melt the butter. Add the shredded kataifi and cook, stirring constantly, until golden brown and crisp, about 5 minutes. Transfer to a bowl and let cool for 5 minutes.
- In a mixing bowl, combine the toasted kataifi, white chocolate raspberry ganache, and pistachio cream. Fold gently until everything is evenly coated.
- Melt the ruby chocolate in a heatproof bowl set over a saucepan of barely simmering water, stirring until smooth. Heat to 113°F (45°C), then cool to 83°F (28°C) while stirring constantly.
- Pour a thin layer of tempered ruby chocolate into the bar molds, spreading it up the sides. Tap the molds gently to release air bubbles. Reserve enough chocolate for the base.
- Spoon the kataifi filling into the chocolate-lined molds, pressing down gently. Pour the remaining ruby chocolate over the filling to seal, smoothing the tops with a spatula.
- Place the molds in the refrigerator and chill for 20 minutes, until the chocolate is completely set and firm to the touch.
- Carefully unmold the bars. Sprinkle the crushed freeze-dried raspberries over the tops, pressing lightly to adhere.
