Tips for success
To achieve perfectly clean slices every time, dip your knife in hot water and wipe it dry before each cut. This simple trick prevents the ganache from pulling or tearing as you slice through the layers, ensuring that the cross-section of the cake looks just as beautiful as the exterior finish.
When adding the chocolate curls, do so immediately after pouring the ganache, before it begins to set. This ensures the curls stick well and do not fall off when the cake is moved. For a more dramatic look, pile the curls higher in the center of the cake to add height and texture.
Variations
- Mocha Layer Cake: Add one teaspoon of instant espresso powder to the ganache while heating. This adds a deep coffee note that enhances the chocolate flavor without being overpowering.
- Berry Infused: Place a thin layer of fresh raspberries or sliced strawberries on top of the cream filling before placing the second sponge layer on top.
Storage and make-ahead
- Fridge
- Keep refrigerated for up to 3 days in an airtight container.
- Freezer
- The cake is not recommended for freezing as the whipped cream will change texture.
- Reheat
- Do not reheat; serve chilled or at room temperature.
Store the cake in an airtight container or under a cake dome in the refrigerator. Keeping it covered prevents the sponge from drying out and stops the cream from absorbing other odors in the fridge.
It is best consumed within three days for the optimal texture and flavor of the fresh cream and sponge.
The sponge layers can be baked and stored, wrapped in plastic, for up to two days before assembly. The ganache can also be prepared in advance and gently reheated.
However, the final assembly should be completed no more than a few hours before serving to ensure the whipped cream remains fresh and airy.
Serving ideas
Serve the cake chilled or at room temperature, depending on the preferred texture of the ganache. For a softer, more decadent experience, take the cake out of the refrigerator twenty minutes before serving.
Pair each slice with a small spoonful of extra whipped cream or fresh berries to balance the richness of the chocolate.
Present the cake on a glass pedestal to highlight the layers. Using a dedicated cake server makes it easier to lift each slice without disturbing the delicate filling.
Ensure that the serving area is clean and that the cake is the centerpiece of the dessert table, as its visual appeal is part of the experience.

Rich Double-Layer Chocolate Cake with Cream Filling

Ingredients
- 2 layers of chocolate sponge cake, store-bought or made ahead
- 1 cup whipped cream
- 1/2 cup chocolate ganache, warm
- 2 tbsp chocolate curls
Instructions
- Place the first chocolate sponge cake layer on a flat surface or cake pedestal. Use an offset spatula to spread a thick, even layer of whipped cream over the top surface of the sponge. Carefully place the second sponge layer directly on top of the cream, pressing down lightly to ensure stability.
- Pour the warm chocolate ganache over the center of the top cake layer. Using an offset spatula, gently push the ganache toward the edges of the cake, allowing it to cascade down the sides in a natural, glossy drip. Ensure the top is fully covered for a polished finish.
- Sprinkle the chocolate curls evenly over the top of the ganache while it is still slightly tacky to ensure they adhere. If using fresh eggs in the cream or ganache, ensure the mixture is heated to 160°F (71°C) to ensure safety. Transfer the cake to a glass pedestal if it was not assembled there already. Let the cake rest in the refrigerator for at least 30 minutes to set the ganache before slicing.
